Very handsome and functional. The leather that makes up the necklace is high quality and the knot they use is seldom seen. I was able to touch up my bark River gunny sidekick with it( m4 steel at 62-64 hrc!), And that is saying something. Haven't tested the fish hook groove, because I don't generally fish in the winter, but I'm looking forward to trying it out

For instance, American Novaculite (aka Washita and Arkansas Stones) is a form of metamorphic Chert that produces some of the best known and best loved natural whetstones in existence. Then, there is a form of Belgian Coticule which has been known for providing extra-keen edges since Roman times and, there is a Japanese Siliciclastic sedimentary stone (aka Japanese Water Stones) which consist of a fine silicate particles suspended in a clay matrix. Plus, there are also various types of man-made whetstones available such as Silicon Carbide (aka Crystalon) stones and Aluminum Oxide (aka India Stones) as well as a synthetic Corundum (aka Ruby) rod and Aluminum Oxide impregnated ceramic rods as well as several different types of diamond hones.
Water stones can also be made out of natural or synthetic materials and they are fast becoming the most popular type of whetstone as they only require the use of water to lubricate the stone. They are not as messy to work with as an oil stone and deliver fast sharpening results but for even better results, soak the stone in water for 5 or 10 minutes.
It is sometimes too confusing on understanding the right sharpener that right to our tools. Then using the chart above you can consider on what is the right stone. In this group, Waterstones is the most preferred because of its easy for sharpening edges in shorter time.
This 600/1,000 grit is my second Unimi knife sharpener, the first is 2,000/6,000 grit and I love them both. Both stones together produce very sharp and well polished knives that reduce the cutting effort and save time in the kitchen. I particularly appreciate that the manufacture printed the grit number on the side of each stone - that helps use the different grits in the proper sequence from the coarser to the finer. The stone comes with a non-slip silicone/rubber base which is very handy.
A blade's sharpness may be tested by checking if it "bites"—begins to cut by being drawn across an object without pressure. Specialized sticks exist to check bite, though one can also use a soft ballpoint pen, such as the common white Bic Stic. A thumbnail may be used[3] at the risk of a cut, or the edge of a sheet of paper. For kitchen knives, various vegetables may be used to check bite, notably carrots, tomatoes, or cucumbers. In testing in this way, any nicks are felt as obstacles.

One of the combinations of stones that I was introduced to several years ago is a unique one, it is a 500, 2,000 and 16,000 grit combination. I was apprehensive when I first tried this, that was thousands of knives ago, it works, it is fantastic combination. It is unique because the traditional way of thinking is that we should be doubling the grit sizes as we sharpen, for example, a 500 grit stone should be followed by a 1,000 grit, then 2,000 grit. This line of thought is meant to be flexible, it is a general rule only, I have broken it countless times.
The company is to be commended for including links to instructional videos in the package. Those videos lay out clearly how to get the most from your Whetstone sharpener stone. Once you get up to speed you’ll likely enjoy the process and at the same time achieve professional quality results time and again. Sure, it’s not fancy and doesn’t have a sleek, chrome plated design but it works.
One thing about this stone is that it is very "thirsty." I had a cup of water close by just to add a little water periodically when it felt like it was scraping a little too aggressively. Also, be sure to do as the instructions say and use different parts of the sharpening surface. I wasn't paying attention the first few minutes, and apparently I would end each sharpening pass in the exact same spot, creating a very very small notch on the edge of the stone. So I turned the stone around and made sure to vary the ending spot, and it seemed to buff out that little notch very quickly. My knife is now incredibly sharp--it seems to glide through material rather than "cut" it. I know some people would continue to go even higher with the grit, but for my purposes this whetstone is just perfect. I'll be tackling the kitchen knives next!
Both Belgian Blue and Vielsalm Coticule are ancient stone layers found in the Belgian Ardenne Mountains with characteristics similar to both Novaculite and Siliciclastic sedimentary stone in that it is a metamorphic stone consisting of both gray and yellow volcanic ash mixed with tiny Spessartite Garnet crystals suspended in a clay matrix. However, due to its geology, both types of stone occur only in vertical seams sandwiched between two thick layers of bluish-purple slate and thus, they must be meticulously extracted mostly by hand. However, this type of extraction process is both very time-consuming and very labor-intensive and, quarrymen can only extract the stone for a few months each year due to inclement weather conditions. Consequently, both Belgium Blue and Coticule whetstones tend to be somewhat expensive.

In addition, the most prized of the natural Japanese Water Stones are quarried in the Narutaki District north of Kyoto, Japan and are commonly available as either bench stones or pocket stones in grits ranging from 120 to 12,000. On the other hand, synthetic water stones are made from Aluminum Oxide and commonly available as either bench stones or pocket stones as well in grits ranging from 220 to 8,000 and, although this is the same abrasive material used to make India Oil Stones, the difference between the two is that the binder that holds the abrasive together enables Water Stones to be much softer than India Oil Stones which, in turn, promotes faster cutting because the worn abrasive material breaks away more quickly and is replaced with fresh, sharp, abrasive material more quickly. In addition, because water stones do not become glazed or loaded with swarf like oil stones can, new abrasive particles are constantly exposed as the stone wears so it continues to cut consistently. Plus, they can be lubricated effectively with water (rather than oil which can ruin some water stones) which combines with the fine particles of abrasive from the surface of the stone to form a slurry which polishes the bevel as the stone cuts. However, it should also be noted that Water Stones do become uneven significantly faster than other types of whetstones although, their softness does make them easier to true again.
To use a whetstone you run the knife's blade back and forth across the stone's surface and due to the constant friction with the stone, which acts like a piece of sandpaper, the knife's edge becomes razor sharp and has a brilliant mirror shine. A sharpening stone is a stone that has got a coarse side and usually a finer side, and that is going to take and re-shape your edge and get it back down thin enough in order to sharpen it. You are basically taking something that is blunt and thinning it back down. You have to remove all of this extra metal and get it back down to where it is thin enough to cut. Very simply, all a knife is is a very thin piece of steel to split whatever you are cutting. If the knife is obviously thicker, it is like trying to cut something with a chisel; it is not going to happen.

The Sunrise Pro doesn’t have the pedigree of some other knife sharpeners on our list but it performs as advertised and that’s all that matters. For a relative song you get to restore all the knives, steak knives, cleavers in your kitchen to near pristine condition. It’s easy to use and the nice strong suction cup on the bottom means you can put the band aids away.
Why, then, do so many of us shy away from the task? To put it bluntly, it's because it's a rather daunting process for the beginner. Your image of knife sharpening may consist of a hyper-masculine chef slashing away violently at a steel rod (we're looking at you, Gordon). Conversely, you might have seen cooks meticulously and methodically stroking their blade up and down a Japanese waterstone with more intricate attention to detail than a Flemish landscape. 
A: We’re all told that a sharp knife is safer than a dull knife yet most everyone knows that merely touching a sharp knife can often result in a painful cut while we can wrap our hand around a dull blade with little worry. So why would anyone in their right mind claim that a sharp one is safer than a dull one? To a certain extent it’s a matter of semantics for sure, because there is no denying you have to be extremely careful around really sharp knives. But at the same time there is a very good reason to consider a dull knife to be more of a safety hazard than a sharp knife.
The newly designed dual-sided combination whetstone from Fallkniven features a super fine white ceramic stone (0, 1 micron) with a grit of 1400 to 2000 and the dark grey ceramic stone is made of synthetic sapphires (1 micron) and has a grit of 800-1000. There is no need to add any oil or water, just lay the blade on the stone, raise the blade's spine and deburr your blade on the grey side until it has a razor-sharp edge and then use the smooth white side to get a nice polished edge.
Diamond hones are made from very small, industrial grade, diamonds adhered to the face of a metal or plastic plate. Also, because Diamonds are so much harder than any of the other sharpening materials, they tend to cut very fast and last much longer than the other whetstone materials. But, they are also often more expensive to purchase. In addition, Diamond Stones generally consist of three different styles consisting of a solid metal plate coated with an adhesive and diamond dust with holes in the plate to allow the swarf to escape, a solid plate without holes for sharpening tools with corners that might catch in the holes, and a plastic plate with islands of exposed plastic interspersed with the adhesive and diamond dust to act as a lubricant.
High Grit Stones: These are also known as finishing stones with the number range going up to 8000, and give you a super refined edge.  They work great with Western knives as they cutting edge resembles a “U” as opposed to a “V”. If you are using your knife to cut meat, then you can happily stop at 4000 or 6000 grit. If you are only using it for vegetables or fruit go all the way to the 8000.
I recommend it as a lightweight alternative to larger stone for smaller knives. Leather necklace is comfortable and seems strong. I conditioned it for suppleness and swim with it on tightened as a choker. Stone is small, dog-tag size. I use it with water. Functional for small folder knives and multi-tools. Not useful for large fixed blades, since you can't make a long stroke. Small to grip. I use double-sided tape on one side to keep it in place on a flat rock. Not sure of grit, seems like around 1000. It took a while, but i got my old boy scout knife sharp.
Removing the burr is fairly simple. You'll need a leather strop or block (this sort of thing), which is designed to catch the metal fibres from the knife. You could do it with a fibrous tea towel or some newspaper if you like, but I'd suggest going with leather to begin with. The motion is fairly similar to sharpening. Draw the knife over the leather, going away from the edge at roughly the same angle as when you sharpened.
