The goal when sharpening is to create a burr, which is a tiny whisper of metal left on one side of the blade. You'll know you have a burr when you can feel one smooth and one scratchy side to the edge. Warner's is formed in no time at all; I struggled. Nevertheless, eventually I got there. Diamond plates are available in various plate sizes (from credit card to bench plate size) and grades of grit. A coarser grit is used to remove larger amounts of metal more rapidly, such as when forming an edge or restoring a damaged edge. Furthermore, Novaculite consists of several different layers of stone of different densities, grit sizes, and colors. Thus, the red Novaculite layer (aka Washita Stone) is the both the softest and most coarse while, the next most coarse/hard grade is the grey/white Soft Arkansas stone; both of which cut relatively fast for a hard whetstone material and thus, they are an excellent choice for refining a bevel. Then, the next grade of coarseness/hardness is the hard Arkansas stone which is used to polish the bevel rather than define it and, last there are the grades of Hard Black and Hard Translucent Arkansas stones which are used for extremely fine honing and polishing of a cutting edge. The more you use the sharpening stone; the edges of each particle within the stone tend to become slightly rounded over time. When you notice that it is taking much longer to hone blades and edges, it means you need to replace the stone with a new one. Sharpening stones come with decks that make it convenient to keep the tool in balance on the stone.
3. Place the knife blade flat on the stone and raise it to a 10 to 15 degree angle. The key to knife sharpening is maintaining a constant angle. Different knives require different sharpening angles. For a pocket knife, shoot for a 10 to 15 degree angle. This will give you an edge that’s sharp enough for most daily needs, but not sharp enough to perform heart surgery.  Keeping a constant angle by hand takes a lot of practice. Low Grit Stones: A sharpening stone with grit number less than a 1000 is generally used for knives and tools that are damaged. If your blade has any nicks or chips in the blade, the stones will take care of them in a jiffy! They usually have a coarse side for nicks and chips, with the other side for general sharpening. Even if the knife’s edge has become totally blunt, the stone will re-sharpen it perfectly.

You will also need at least one finer stone. Once the shape of an edge is established, successively finer grits are used to refine the edge improving the quality of the cut it delivers. A dull edge will not cut well and should be shaped with a coarse stone. An edge sharpened on a coarse stone will cut better than a dull one, but still won’t be ideal and should be improved with a finer stone. As you progress through finer stones, the cutting edge will continue to improve. How many and how fine these stones need to be varies depending on how fine an edge you require.
