Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.

When the block is intended for installation on a bench it is called a bench stone. Small, portable stones (commonly made of bonded abrasive) are called pocket stones. Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.

Method 1: Use an Electric Sharpener. Quality electric sharpeners are an option, but I strongly discourage their use. First off, they remove a tremendous amount of material from your edge. Sharpen your knife a dozen times, and you've lost a good half-centimeter of width, throwing it off balance, and rendering any blade with a bolster (i.e. most high-end forged blades) useless. Secondly, even the best models provide only an adequate edge. If you don't mind replacing your knives every few years and are happy with the edge they give you, they'll do the trick. So you are going to start at the heel and you are going to time it so that it goes all the way across. You go from one side to the other. You also want to make sure that your stone, I am not going to use as much pressure as I normally would because I cannot mount it on this showcase, you want to alternate from side to side to keep your bevel centered. Some people will take and do three times on one side and then three times on the other, the problem is that your backhand is never as good as your forehand and you end up cheating and you are going to end up with a blade that is offset. That is going to take it and thin down, you are going to get a thin bevel right on the edge. Once you get that V established, you can go from the coarser side to the finer side.

The smaller the angle between the blade and stone, the sharper the knife will be, but the less side force is needed to bend the edge over or chip it off. The angle between the blade and the stone is the edge angle – the angle from the vertical to one of the knife edges, and equals the angle at which the blade is held. The total angle from one side to the other is called the included angle – on a symmetric double-ground edge (a wedge shape), the angle from one edge to the other is thus twice the edge angle. Typical edge angles are about 20° (making the included angle 40° on a double-ground edge).[1] The edge angle for very sharp knives can be as little as 10 degrees (for a 20° included angle). Knives that require a tough edge (such as those that chop) may sharpen at 25° or more.
Cutting angle – With a manual stick or sharpening stone you set the angle yourself so this does not factor into the equation when choosing that type of sharpener. When shopping for an electric sharpener however it does. You’ll want to decide if you want your knives to have the 15 degree “Asian” style angle so that you can make precise cuts or the Western standard 20 degrees or 22-degree sharpening angle. Most people will opt for the 20 or 22-degree angle simply because their cuisine doesn’t call for a lot of finesse from their knives and those knives are probably of a heavier Western variety anyway.

Now it's time to polish. This is when you'll swap over from the coarse grit to the finer grit (make sure this side is wet, too). I found the knife still had a bit of grime on it, so I gave it a wipe clean beforehand. The motion is exactly the same as with sharpening, but you can apply slightly less pressure, and limit to roughly 30 strokes on each side. 
The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it.

The goal when sharpening is to create a burr, which is a tiny whisper of metal left on one side of the blade. You'll know you have a burr when you can feel one smooth and one scratchy side to the edge. Warner's is formed in no time at all; I struggled. Nevertheless, eventually I got there. Once you've got the burr, it's time to move on to step three.

(They are also excellent for tools, chisels etc. and they are the premier choice for many Straight Razor honers).
Heres why I wasn't impressed at first. I only used it for a few minutes on each side, which resulted in nothing. I watched a video online with a master chef using his stone, and he sharpened his knife for 10 minutes on each stone before moving up to a finer grit. I took this hint, and used sharpened my knife on each side of this stone for 10 minutes, which led to perfection.
I've always wanted to sharpen knives on water stones, and this set gave me the motivation to finally give it a shot. The price is amazing for the quality and content of the set. It comes with all the grits you need to sharpen anything... I usually start on the 400 grit if the knife is very dull, or directly on the 1000 grit if it's not too dull. The 3000 and 8000 grit stones are softer and ideal after the coarser stones. The online learning section is truly amazing, much better than I expected. A convenient place with instructional videos and many articles about knife sharpening. Only downside is that the knives are now so sharp I need to be very careful using them... but that's a good thing! I feel like I fell in love with knife sharpening again.
The 8,000 grit Kitayama is definitely a popular 8K stone, it is my favourite, and the feedback has much to do with that. It is silky smooth and feels creamy when you use it. When reaching refinement levels of 6k and above, polished bevels/edge are inevitable, and often sought after. The level of polish from this particular stone is very beautiful, assuming that you have done some refinement prior to this but it is a wonderful 8,000 grit stone.

Method 2: Send it out to a professional. This is a good option, provided you have a good knife sharpener living nearby, and are willing to pay to have the services performed. All but the best professionals also use a grinding stone that, again, will take away much more material than is necessary from your blade, reducing its lifespan. Put the pointed, narrow end of the sharpener up against the open end of the gut hook. The narrow, pointed end of the sharpener should face in toward the thickness of the blade, away from the edge of the gut hook. Match the angle of the sharpener to the original edge angle. This will maintain the correct sharpening angle and prevent you from getting cut by the blade tip. Hold the same angle when sharpening each side of the gut hook.

Don't know. Not sure that I really care, as these stones definitely did the job that was asked of them, and did it with ease, even for a beginner whetstone user. I'll probably stick with them, at least until I get a lot more experience. Though, I do see a 10,000 or higher grit stone in my immediate future - more to play around with, than a feeling of genuine need.

You need to adjust your fingers as you move the knife back and forth. Because sharpening takes place under your fingers, start with them at the tip and, as you pull the knife back toward you, release pressure completely and pause. Then, shift your fingers just a little down the blade toward the heel. This finger dance is critical and takes time getting used to.

I'm a novice knife sharpener. I've had to unlearn what my grandpa taught me in order to use these. So far, I've had decent but mixed results. I've switched to my cheap 200/400-ish cheap tool stone from harbor freight for cutting a bevel when the blade has either been damaged or did not have a proper bevel. The 400/1000 grit stone in this kit is soft. Very soft. I have bowled it out several times. It makes keeping a steady angle difficult. But these stones at this price point are meant for learning, and for that they serve their purpose.

As an indication, ara-to is probably (using a non-Japanese system of grading grit size) 500–1000 grit. The naka-to is probably 3000–5000 grit and the shiage-to is likely 7000–10000 grit. Current synthetic grit values range from extremely coarse, such as 120 grit, through extremely fine, such as 30,000 grit (less than half a micrometer abrasive particle size).[citation needed]
