Diamond hones are made from very small, industrial grade, diamonds adhered to the face of a metal or plastic plate. Also, because Diamonds are so much harder than any of the other sharpening materials, they tend to cut very fast and last much longer than the other whetstone materials. But, they are also often more expensive to purchase. In addition, Diamond Stones generally consist of three different styles consisting of a solid metal plate coated with an adhesive and diamond dust with holes in the plate to allow the swarf to escape, a solid plate without holes for sharpening tools with corners that might catch in the holes, and a plastic plate with islands of exposed plastic interspersed with the adhesive and diamond dust to act as a lubricant.

I was delighted to discover, on opening my recently purchased Kanpeki knife set, single-edged blades. I had never used single-edged blades in the kitchen. I was pleasantly surprised to find each knife was so versatile. Able to do the most delicate cutting, to the workhorse of basic slicing and dicing. They are undoubtedly the best sharpening stones available in the market. Due to their strength and long lasting abilities, they are the number one product category. As they are made from diamond they are very expensive which is their only downside. But if you can get one of these they will serve you for your lifetime easily without any doubt. Diamond honing stones are best.

Whetstone has two different sides of grain for sharpening and polishing knife edges. These softer Japanese stones have several advantages over harder stones. Medium Grit Stones: The number range here is from 1000 to 3000, with the latter being the basic, go-to sharpening stone. If your knives have lost their edge and need a good sharpen, then this is the grit you should start with. Don’t use it too often or the knife wears down rapidly. If you like to sharpen regularly, then the 2000 and 3000 grit are the ideal choice as they are less coarse, but please remember they are designed for sharpening and not maintaining the edge.

Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.

Budo's sharpening stone is an excellent buy. The 1000 and 4000 grit stone is a good mix for sharpening everyday household knives. The alignment tool also helps a person hold a knife at the proper angle so that they don't inadvertently flatten the edge and dull the blade. The stone has a rubber seat so that it doesn't slide within its bamboo stand. The only negatives are that detailed instructions are not included with the packaging, however, a link is sent to your e-mail address but that doesn't help if it's a gift. Also the tool doesn't work well with short knives like a paring knife. Lastly, the 1000/4000 stone isn't quite suitable for professional level knifeware but Budo does sell higher grit sharpening stones.
Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.

To summarize, Shapton Glass 500, 1,000 and 2,000 is a good combination and if you would like to throw in the 4,000 grit stone in lieu of the 2,000 that is good as well. If your knives are very hard, ZDP 189 for example, this is a fantastic choice. (They are also excellent for tools, chisels etc. and they are the premier choice for many Straight Razor honers).
Oil Stones differ from water stones in that they require the use of honing oil to float the swarf (metal particles). Also, these stones are commonly made from one of three different materials consisting of Novaculite, Aluminum Oxide (Corundum), or Silicon Carbide (Carborundum) and they all use oil to lubricate the stone and suspend the swarf in order to prevent the stone from becoming clogged. Also, while Novaculite and Coticule are the most traditional types of oil stones, there are also synthetic oil stones made by the Norton abrasives company called “India Oil Stones”.
You want sharpening stones that will be useful for the majority of your edges now, and that will remain useful as you expand both your tools and your sharpening toolkit in the future. Ending up with duplicate stones or ones that are no longer useful as you gain new knives or tools is a waste of money. The goal is to start with something that will stay with you as your needs develop.

Once you've sharpened one side, you need to flip over, but don't swap the hand gripping the blade – think of it a bit like going backhand with a tennis racket (see above). Lead with the heel this time, rather then with the blade, but repeat the process in three parts. After five strokes on each third of the blade, it's time to check your knife. It's not an exact science, and it all depends on how blunt your blade was to start with (mine was very blunt indeed). But if you sharpen fairly regularly, it should just take a few strokes. 
In recent years, some whetstone manufacturers have started producing ceramic whetstones made from hard, ceramic, powders that are mixed with Aluminum Oxide and then sintered to form a solid. But, rather than using oil or water to lubricate the whetstone, ceramic whetstones are meant to be used without lubrication and thus, they provide a significant advantage for chefs who need to keep their knives sharp but, who do not have either the room or time for using a bench water stone. Thus, they are commonly available as either bench stones, pocket stones, round rods, or triangular rods.

I bought this wonderful knife on faith. I was told in March when it would ship. I received emails alerting me that my knife would be arriving as promised. It came early, thanks! A diamond plate is a steel plate, sometimes mounted on a plastic or resin base, coated with diamond grit, an abrasive that will grind metal. When they are mounted they are sometimes known as diamond stones.[12] The plate may have a series of holes cut in it that capture the swarf cast off as grinding takes place, and cuts costs by reducing the amount of abrasive surface area on each plate. Diamond plates can serve many purposes including sharpening steel tools, and for maintaining the flatness of man-made waterstones, which can become grooved or hollowed in use. Truing (flattening a stone whose shape has been changed as it wears away) is widely considered essential to the sharpening process but some hand sharpening techniques utilise the high points of a non-true stone. As the only part of a diamond plate to wear away is a very thin coating of grit and adhesive, and in a good diamond plate this wear is minimal due to diamond's hardness, a diamond plate retains its flatness. Rubbing the diamond plate on a whetstone to true (flatten) the whetstone is a modern alternative to more traditional truing methods.[13]
Double-sided stones, with a medium grit on one side and finishing stone on the other, are popular among beginner sharpeners and convenient for home use. Lau recommends the Mizuyama two-sided whetstone ($73), with 1,000- and 6,000-grit sides, for beginners. “The stone itself is very high quality, really geared toward high-quality knives, so you can pretty much sharpen any metal with this one.”
This King’s sharpening stone is a double-sided whetstone; one side features a 1000 grit, and the other a 6000 grit size. Now, is it affordable? Not quite; but it’s still reasonably priced; you’ll get excellent value for the price, that’s for sure. Easy to use (well, once you figure it out) and with an outstanding sharpening performance, what else could you ask for?

When the block is intended for installation on a bench it is called a bench stone. Small, portable stones (commonly made of bonded abrasive) are called pocket stones. Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.
