While sharpening your knife, Place the blade across the stone, and tilt at the desired angle. For most kitchen cutlery, this is somewhere between 15 and 35 degrees. The optimum angle should be stated in any paperwork you have for your cutlery, but use 20 degrees if you are not certain. With your wrists held rigid, draw the blade against the stone. This grinding action will remove a thin layer of the blade. Periodically move the stone so that you are working on a different section of the blade. Ensure that the blade is sharpened to a point by rubbing the stone on each side of the blade until the tip of the blade reaches the desired sharpness.
The most important aspect of a sharpening stone is the grit. If you have knives that have taken a beating and are either nicked up or really dull, you’ll need a courser stone to get it back into shape. And in order to put an exceptionally sharp edge on an already sharp knife, you’ll need a finer grit stone. If your knives are already in pretty good shape and just need a touch up, buying just a finer grit stone might be enough, but don’t think you can get away without a courser stone for knives that need more TLC. Once sufficiently wet, it's time to position the stone on something solid, so it doesn't move about during sharpening. Many come with holders, but you can just place it on a slightly damp tea towel on the table. The stone should be roughly perpendicular to your body, though Warner told me it is sometimes easier to angle it ever so slightly to the right (if you're right handed).

Place the index and middle finger of your other hand on the tip of the blade. Apply pressure and swipe the blade down in a pulling motion. Release pressure, and move the knife back up to your starting point. Apply pressure only when stroking down; otherwise, you’ll risk cutting into the stone. Repeat the up-and-down swiping motion; with each swipe, inch your two fingers along the blade, in the direction of the heel. When you’ve reached the heel of the blade, use the index finger of the opposite hand (which should already be placed on the heel) for extra support. Run a finger along the opposite edge of the knife. There should be a slight ridge, or burr.

We tend to recommend natural Japanese water stones only to experienced users who are thoroughly familiar with the synthetic Japanese sharpening stones. Natural stones are not to everybody’s taste and there are inevitably many uncertainties with regard to their grit grade, which cannot be determined exactly, their hardness and their suitability for certain types of steel.
We just got done explaining the difference between water-based stones and those based with oil. Well, this last section also plays a role in determining which style you prefer. But, either way, it is not as if there is a clear-cut loser in this case. The reality of the situation is this; sharpening stones need to be lubricated because if they are not, they will lose their effectiveness and will not be as efficient. But, the manner in which they need to be lubricated is going to be different between the different types of stones.
Once you’ve decided to start sharpening your kitchen knives with a sharpening stone, you’ll need to take the necessary steps to actually get going. These steps include finding and buying the best sharpening stone for use at home, learning the basic technique involved in doing the sharpening, and then practicing enough times to get it right.
