I bought this stone to get my grand father’s straight razor back to being shave ready. Originally I was looking for a 4000/8000 combo but I liked the price and didn’t think the 3000 would be an issue. The stone arrived in a nice reusable package to keep to safe from breaking, along with a lap stone to keep the sharpening stone level. Prepping the stone was a beeeze and it didn’t take long before there was a true edge back on the straight razor. Definitely a good stone at an excellent price.

I would recommend that you only purchase this product if you have lower grit stones in addition to this. 3000 and 8000 are really for honing and polishing, and it will take you a LONG time to sharpen a kitchen knife with only this combination of grits. However, once you have sharpened your knives these will be helpful for maintaining the sharp edge through regular honing.
When sharpening a knife, you're actually grinding away the existing blade to create a new edge. Shapton Glass 320, 500, 1,000, 2,000 and 16,000. I have the 4,000, and 8,000, they are absolutely fine, great in fact but I just don’t use them as much as the others. These stones excel on knives made of hard steel, the hardest steel is no match for these. This does not mean you can’t sharpen hard knives on the Naniwa brand of course, you can. I have been using this particular brand of stone for many years and I absolutely love them.
The Wusthof FineWhetsone sharpener is a knife sharpening stone with 2 sides for sharpening and for polishing knife blades. It can be used, upon your preference, with oil or water. It is composed by ceramic materials which provide a very good resistance again usage. The usage is a bit special comparing to the other sharpening stones. You need to submerge it in water for about 10 minutes before starting to sharpen your knife. During the sharpening process, you need to apply water from time to time as the stone will release minuscule particles which, in combination with the water you apply, will sharpen your blade. Once you have sharpened the 2 sides of your knife, turn the Wusthof stone over and repeat the process in order to polish your knife.
Low Grit Stones: A sharpening stone with grit number less than a 1000 is generally used for knives and tools that are damaged. If your blade has any nicks or chips in the blade, the stones will take care of them in a jiffy! They usually have a coarse side for nicks and chips, with the other side for general sharpening. Even if the knife’s edge has become totally blunt, the stone will re-sharpen it perfectly.
Now it's time to polish. This is when you'll swap over from the coarse grit to the finer grit (make sure this side is wet, too). I found the knife still had a bit of grime on it, so I gave it a wipe clean beforehand. The motion is exactly the same as with sharpening, but you can apply slightly less pressure, and limit to roughly 30 strokes on each side.
