2. Although I’ve been sharpening knives for a while, I never could get a knife sharp using the freehand method, I’ve had to rely on various jigs to set & maintain a constant angle to the bevel. To begin with, the Lanksy knife sharpener kit was my main tool, but then I found a South African jig made by Warthog Knife Sharpeners. I still have their first model, which, if memory serves me, came out in the late 1990’s. This has since been upgraded & is supplied with a diamond stone, which is worthless unless it’s going to be used for ceramic knives. However-the Warthog & the Warthog Multi-Blade’s modus operandi has the knife moving ABOVE the stone, unlike the Lanksy / Edge Pro / Edge Pro Chinese copies & variants. ( No oil / water dripping off the stone from above the knife). Also, the Warthogs use any bench-size whetstone available to its owner, a very big plus if you want to use your grand-dad’s old Arkansas stone.No tie in having to buy the manufacturer’s specialised stones which work only with one type of sharpening jig.
Once the burr is removed, it's time to test the sharpness with paper. Hold a piece of newspaper at about 45°, with a bit of tension, and slash lightly with each point of the blade. If it cuts through easily, your knife's sharp. Warner speedily lacerated his newspaper, but I of course struggled. There is an element of technique involved, he reassured me.

This type of stone is slower at sharpening or honing a blade and it can be messy and you need to always have some oil on hand but it creates a nice sharp edge and a beautiful polish.
Nail the technique: Begin by positioning the knife with the edge facing up. Place your thumb on the spine and your index finger on the heel. Hold the knife so that the blade forms a straight line with the rest of your arm. Position the knife so that the bevel of the edge is flat against the whetstone. Note that this angle will be different for every knife; it’s a matter of feeling it out.
Nothing can be more annoying than using a dull equipment in the absence of the best sharpening stones. It will make you exert more force where you actually need to use the sharpness of the blade. The ultimate result will be that you will end up having muscle pain which will take your annoyance to an infuriating level. To avoid this frustration, you should always keep your blade sharpened. That is where top quality sharpening stones can really help you out.
The DuoSharp Plus stones are nicely sized at 8” long by 2 5/8” wide and have two grits on each stone to maximize value. The Plus in the name refers to an area of continuous grit in the otherwise interrupted grit surface of the stone. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.
This sharpening stone works by removing the first level of molecules from the blade of your knife, exposing a new edge. It is made from dense ceramic, which is harder than other stones and will show less wear. You won’t see any dips or valleys develop in this stone, as they do in softer stones. It provides ample area on which to draw an edge down and across.
When you are first beginning to learn about this technology, one of the terms you need to familiarize yourself with is grit. You do not need to necessarily remember the literal definition of it. But, you need to understand that the amount of grit a whetstone has goes a long way in determining its performance. Most notably, each grit amount can be used for different situations. Take note that the lower the grit is, the coarser or less fine it is. So, if you have extremely dull blades that need to be brought back to life or ones that are damaged, go with grits less than 1000.  As for 1000-grit itself, this can be considered the standard and is a good starting point for most knives that have simply lost their edge.

For instance, if you have a kitchen knife with a strong blade that has a hardness rating of 58 HRC in the Rockwell scale such as the knives from the popular Wusthof Classic series, you'll need a sharpening stone with fine grit. On the other hand, if your knife has a lover level of hardness such as 53 HRC, then you will need a whetstone with coarse grit.
But it's a different type of sharp, according to Joe Authbert, product development manager at ProCook. "What it does is add tiny little micro-serrations onto the edge of the blade." But fear not - your smart knife won't end up looking like a bread knife, as you'll be hard-pressed to spot the serrations. "If you looked at it under a microscope, on the cutting edge, there are these little lines that generate the sharpness, rather than a waterstone which is a smooth sharp edge," says Authbert. 
Now you may wonder, if a finer stone produces a better cutting edge why do I need a coarse stone at all? The answer is that finer stones work much more slowly than coarse ones. The amount of metal a fine stone removes with each pass is much less than what a coarse stone removes. If you have an edge with a good shape to it from a coarse stone, this is not a problem because the fine stone doesn’t have to remove much metal to improve the edge. If the edge is dull, it will take many times longer to reshape it with a fine stone than it would with a coarse one.

A coarser grit is used to remove larger amounts of metal more rapidly, such as when forming an edge or restoring a damaged edge. A finer grit is used to remove the scratches of larger grits and to refine an edge. There are two-sided plates with each side coated with a different grit.[14]
I would recommend that you only purchase this product if you have lower grit stones in addition to this. 3000 and 8000 are really for honing and polishing, and it will take you a LONG time to sharpen a kitchen knife with only this combination of grits. Therefore, the first step to choosing a whetstone is to determine your intended purpose and then choose your whetstone accordingly. For instance, when sharpening tools that do not require a fine edge, you should choose a relatively soft, coarse, stone such as a Norton Crystolon water stone. However, for sharpening tools that do require a fine edge, a somewhat harder Norton India oil stone would be a good choice. But, for sharpening hunting knives where an exceptionally fine edge is required, a Novaculite or Coticule oil stone would be the best but, most expensive, choice. So, the process of choosing the correct whetstone for any given purpose is to first determine how fast you would like for the stone to cut and how fine an edge you need, and then choose either a soft, coarse, stone or, a hard, fine, stone of the appropriate type and grit.
The following are my personal favourites and they are all synthetic stones, I do have experience with natural what stones but lets keep it simple, lets stick to synthetic water stones. Believe me, some of the world sharpest knives are sharpened solely on synthetic stones. Here are my personal favourites, I use these water stones every day and the order is not necessarily in priority, they are all good.

I am just starting out sharpening with whet stones. I have found these stones to be very nice and the instructional videos that come along with the set on knifeplanet are extremely helpful to anyone starting out. The cost of the set was very reasonable and seems to be a great value. What a bamboo base, or any similar base, is going to do is stabilize the whetstone to ensure it does not slip while you are sharpening your knife. The reason why you will see bamboo a lot is due to the properties of the material. Bamboo itself is a wood and is actually a bit harder than oak and ash. Even for flooring, it adds stability and that is exactly what you are looking for to prevent any slippage.
As always try to maintain the same number of stroke for both of the sides to give each side same edge. After ending the process, you should always clean your blade and sharpener with care. You can take good care of the stone by scrubbing the stone with water and liquid soap. As the stone is a medium grit one, you can’t expect to get a high sharpness out of it. To sum up, its a good sharpener.
I bought these knives based on the reviews on the web. As you can all see, the reviews are very positive. So, I purchased these with VERY high expectations. I was reluctant based on how expensive these knives are. After using them now for several months I am blow away by the quality of these. It has changed my whole view of how important great knives make to my meal preparation. I can say without reservation that these knives are a bargain. An extremely well written and informative article on sharpening. Overtime we all get to love certain stones for our sharpening needs. I am a huge coticule fan, and although i have used all the others, i always come back to this natural stone above all others. Still trying to figure if i chose it or it chose me! NEver the less there are so many options out there it is not hard with a little time and effort to find the right combination for your needs.
