In terms of feedback, in the eyes, and in the hands of many sharpeners, the feedback on this particular brand of stones is not to their liking and often it is enough to stop them from using them. These are thinner than other stones as well so you may get the impression that you are not getting your moneys worth. They are very hard stones, there is no soft, creamy sensation as you sharpen, there is not much feedback at all in fact.
Sharpening is a basic prerequisite for any woodworker, without a fine, honed, edge, nothing much is liable to happen. Instead, the craftsperson is likely to be hamstrung by their inability to make progress.  But, once that elusive edge is found by using a sharpening system, there’s no limit to what can be achieved. It’s been said before, but ‘sharp fixes everything’.

Be careful: Don’t move your fingers laterally along the edge, you’ll cut yourself. Feel for a rough area running from tip to heel. Again, it takes time to know what to expect because the best burr will be subtle. Just know that the bigger the burr, the more metal you are removing—more than necessary. Don’t worry, you won’t ruin the knife doing this. You’re learning here, and mistakes are part of the sharpening journey. Learn from them.

There are three different makes of synthetic water stone currently on offer. Firstly, the general duty King stones, made by Ice Bear and available in grit sizes from 220 to 10,000g. Secondly, those manufactured by the Sigma Power Corporation in Tokyo, designed specifically to cope with sharpening high alloy steels. These ceramic stones have a very fast cutting action and will release new, aggressive particles in use. However, they will wear slightly faster. Thirdly, we have Bester, manufactured by Imanishi in Kyoto, Japan. Their particle bond is moderately strong and will  quickly cut O1, A2 and PMV-11 steel. They’ll remain flat for just as long as a slower cutting stone, with a stronger bond matrix.
My favorite chef knife was not cutting it anymore (see what I did there, lol). Last time I took it to my neighbor for sharpening and he got out his bit grinder! It was overkill and left little grooves in the blade. 😣 So this time I decided to try my hand at it with a tool that was intended for the job. After a few You Tube videos, I felt comfortable enough to give it a go. It was easy peasy, and within minutes I was cutting through peppers, onions and celery, like a hot knife through butter! I appreciated the guide and the non-slip base, it gave this novice a sense of confidence. Would recommend this set.
Not to be a pain, but, “it depends”. With a any grit stone you will get a “tooth” on the edge of the knife. The particles in the stone do their work by sort of gouging out some of the steel. See this excellent Electron Scanning Microscope photo from Ron Hock of Hock tools. This is from an 8,000 grit stone magnified 2,000 times. A 1,000 grit stone has particles of around 15 microns and 8,000 has around 2 microns. So your 1,000 grit edge will have larger and deeper “teeth” than this photo. So are the teeth good or bad?
Very interesting. If you work flat, 45 degree is what I was taught. Love the wet stones, especially the oiled ones. The nice thing about the leather part, is the mirror finish on a razor sharp blade which is a must if doing fine wood working, carving etc. A rough blade simply does not have the fine detailed dexterity. I find that the oiled sandpaper can work great as well, but found that the refined clay bars (white refined fired clay rounds and flats etc) does a wonderful job of keeping those razor edges refined, smooth as possible and then one can high polish them for smooth cutting. Believe me, when working wood for a flute, one wants that refined edge.! Learning how to hone a blade on a flat surface teaches one to work outside without a table/wall handy too...:) But we all have to start somewhere!:) Anyway, great stuff and a great start for those who want more from their tools!:) Cheers!

A sharpening stone is made of particles of abrasive material that are sintered or bonded together. The blade is moved across the stone and the steel is worn away, which creates the edge. However, at the same time, the stone is also worn away to reveal new, coarse particles. As a general rule, the softer the stone, the more rapidly it will wear and will be more aggressive in use. Harder stones don’t wear as quickly.
When a whetstone is used to cut metal, it acts like sandpaper by removing small particles of metal (aka “swarf”) with each pass of the blade over the stone. Therefore, whetstones with more coarse grits cut faster than those with finer grits and, at the same time, soft whetstones cut faster than hard whetstones because each pass of the blade over both types of whetstones not only removes fine particles of metal from the blade, it also removes fine particles from the surface of the whetstone (aka “slurry”) which continuously exposes new cutting crystals. However, if the swarf is allowed to build up on the surface of the whetstone during sharpening, it will clog the stone and drastically diminish its effectiveness. Therefore, some whetstones require water to lubricate the stone and suspend the swarf whereas, other whetstones require oil to lubricate the stone and suspend the swarf.
Naniwa also makes the Naniwa Traditional line of stones, these are less expensive than the Professional lineup and I believe were created to compete in terms of cost with some other brands such as King that are less expensive, more attractive to some who are just starting and may not want to invest a lot of money. I have tried the Naniwa Traditional 220, 1,000 and 2,000 grit stones and I thoroughly enjoyed them, so if you are considering a less expensive brand to get started, these are also good. I do not like them as much as the Professional line but I do like them, they work, they make the knives sharp.

I'll second /u/waitfollowme and say a 1000/6000 combo stone. It works wonders for me. If you have a REALLY dull knife, you can start with something like a 600 grit...but you can screw up your blade unless you really know what you are doing because it takes off too much steel too fast (that being said, a professional can fix whatever you do to your knife, within reason of course). Even with a really dull knife you can use the 1000, it'll just take longer.


using an appropriate blade for the task – a thinner blade for more delicate work, and a thicker blade whenever a thinner blade is not required (e.g. a thinner blade might be used to cut fillets, butterfly steak or roast for stuffing, or perform Mukimono, while a thicker one might be used to slice or chop repeatedly, separate primal cuts of poultry or small game, or scrape and trim fat from meat or hide, as these actions would be more likely to cause unnecessary wear on a thinner blade.)
Push the point you want to sharpen with your fingers. While keeping the angle and pushing the point with your fingers, stroke the blade until it reaches the other edge of the whetstone, then pull the blade back until it reaches the edge of the whetstone. This back and forth is counted as one stroke. Repeat it for about five strokes until you can see or feel some small burrs (edge curvatures) Then move the position of your fingers to where you have not sharpened yet, and repeat this five strokes of sharpening processed from the tip to the base of the blade.

Once you've sharpened one side, you need to flip over, but don't swap the hand gripping the blade – think of it a bit like going backhand with a tennis racket (see above). Lead with the heel this time, rather then with the blade, but repeat the process in three parts. After five strokes on each third of the blade, it's time to check your knife. It's not an exact science, and it all depends on how blunt your blade was to start with (mine was very blunt indeed). But if you sharpen fairly regularly, it should just take a few strokes. 
A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. To find the proper angle, hold the knife horizontally with the edge touching the steel. Move the spine upward to create a 45-degree angle, and then half that again for your optimal sharpening angle.
So, as you can see, there are numerous different types and grades of whetstones on the market today and each has its advantages and disadvantages. Therefore, the right practice to choose the right sharpening stone for you is to choose a whetstone material based upon how fast you need to remove metal and how fine an edge you need. For instance, although they are often the most expensive type of whetstone, diamond hones generally cut the fastest even in their finer grits followed by Crystolon Stones and then India Stones which are then generally followed by Japanese Water Stones and then by Novaculite, Belgian Blue, and Coticule whetstones in terms of how fast they remove metal. However, it should also be noted that the rougher an edge is, the less sharp it is while, the more polished an edge is, the sharper it is and thus, rough edges are fine for some tools while other tools require a much finer edge and, hunting knives require the finest edge of all. Therefore, the trick to choosing the proper whetstone for any given sharpening purpose is to purchase multiple stones with varying grits to accomplish each given task from cutting an initial bevel or defining a damaged edge to refining an existing edge to polishing it. I would recommend getting a stone with a lower grit (less than 800) after you get a polishing stone, as the main uses of a lower grit stone would be to take off a lot of metal very quickly (removing chips). Its better to get a bit of experience on something a bit slower (1000 grit) and learn to hold a steady angle before diving deep into lower grits. The only time I could have used a stone lower than 800 grit (I used a 500 grit) was when I was completely changing the edge on a Kasumi (59-60HRC) knife.
This is an important but often confusing aspect of the sharpening process. When you sharpen knives, especially on coarser stones, you'll notice a burr form on the opposite side of the edge. It can be difficult to see, but easy to feel. Carefully feel for the burr by running your finger from the spine of the knife to the edge. The burr will jump from side to side as you sharpen each edge, and once you've felt the burr move to both sides, you can move to the next finer stone. Once you get to the finest grit, the burr will become smaller and smaller!

Diamond whetstones, like the DMT Diamond Whetstone, are made out of industrial type diamonds which create a long-lasting hard, coarse and flat surface. I give Sharp Pebble a top rating for two reasons. First, the company emailed a user guide for me to review and learn how to best use its product while it was being shipped to me. Wonderfully proactive. Second, the sharpening stone did a terrific job restoring the edge on my kitchen knives that had been woefully neglected. Ever rent a house and every knife in the kitchen has the edge of a butter knife? I was almost there. Now, the knives are cutting beautifully. I have only one suggestion for Sharp Pebble. While the stone includes a useful angle guide that can be attached to a blade and the guide gives clear steps on prepping the stone and how to hold the blade when sharpening, it does not illustrate the manner in which the blade needs to be moved across the stone. I had to go to Youtube to get some tips on the exact method. I have historically been very bad at putting an edge on a blade due to ignorance primarily. But with the help of the video and a good stone, I did an effective job. The base does a great job of holding the stone in place and is attractive in the kitchen.

Even with a badly-worn or even misshapen edge, you only need to work through at most 3 or 4 successive grits before honing. Although it's true that it's more efficient not to skip grits, it's a lot more expensive (and more hassle) to deal with a dozen or more grits than it is to work through just a few. So in practice, it doesn't make much difference whether your 600-grit stone is actually closer to 550-grit or 650-grit, because you're most likely going to skip at least a couple hundred grit every step along the way.

Lots of good information here. A few questions, though. Is the particle size the average or the maximum? Does anyone have any information on particle size distributions? There’s no way to get every single particle the exact same size, so the best you can hope for is a tight range of sizes. But the tighter that range, the higher the level of quality control you need (and therefore the higher the cost). For instance, I’m guessing that the cheaper sandpapers have a larger range of particle sizes for a given grit. It’s probably an academic argument, but I was curious.

If you only have one, it would be 1000. Personally, I have one much rougher to rehab knives with chips only. I also have an 8000 stone for final polish and a strop to finish. If you only used a 1000, it would probably work 80% as well as one that was refined a bit more. Does that last bit really matter? Not much, but I find that I can cut onions without tears with a very sharp knife.

When I contact the company customer support, they told me is because the way I sharpen my knives are not correct, I put too much pressure on it, so I asked them if that's true, since I am using the same method to sharpen my knives, why it won't happened to the other side (#8000) and the other stone (400/1000)? They don't even give me any answer to that question at all.

Obviously, you’ll need a whetstone (as well as a few other things), and you’ll want to work near your sink or a bucket so you have easy access to water. Fill a container with water, then soak the whetstone in it until it stops bubbling. Inspect your blades for any trouble spots, and get to sharpening using the methods and motions described in the video; making sure to check your progress as you go. We’ve talked about sharpening knives with whetstones before, but this guide is a bit more thorough and the old video has since been removed.
It depends. Meat cutters prefer this tooth because it makes their jobs easier and they are very good with a blade and know how to keep it sharp by avoiding bones, the cutting board, the table, etc... But that’s all they care about: cutting meat—which is more of a sawing action than a push or chopping cut. If you chop veggies all day, that’s a push cut and you’ll want a different edge; if you slice fruit, different edge. You get the picture.
You can actually use these stones as finishing stones in their own right however and perhaps for Western knives which typically have a cutting edge similar to a ‘U’ rather than a ‘V’ shaped edge, a #5000 grit stone may well be as far as you need to go.but if you want to go for the #6000 or #8000 super fine stones then go for it! The only bit of advice you should follow is this: If you are using your knife to cut meat, then you can happily stop at #4000 or #6000 grit. If you are only using it for vegetables or fruit go all the way to the #8000. This is because the refinement you get from a # 8000 grit stone is such that your knife edge has the potential to bend whilst cutting through muscle and sinew.So that’s Whetstone grits explained. Now that you're holding the handle and the blade is in position, gently apply some pressure to the belly of the blade with your left hand fingers – "roughly the amount of pressure to semi depress a sponge," says Warner. Starting at the tip, glide the blade up and down the stone – around five strokes up and down is a good number. Then move to the middle – five more strokes. Finally five strokes up and down on the heel.
The answer to the question of how to choose a single whetstone from among the many is actually one of both purpose and expense. Indeed, as the old adage says: “You get what you pay for” – This is certainly the case with sharpening stones. In fact, as a general rule, a high quality, natural, whetstone is significantly more expensive than a man-made whetstone but, they also tend to produce a noticeably finer edge than man-made stones do. On the other hand, man-made whetstones (with the exception of diamond hones) are very affordable and, just like natural whetstones, they too are available in different grits for different stages in the sharpening process from cutting the initial edge bevel to polishing a finely honed edge.

The word “Novaculite” is derived from the Latin word “novacula”, which means “razor stone” and is essentially a metamorphic, recrystallized, variety of Chert composed mostly of microcrystalline quartz that is found in the found in the Ouachita Mountains of Arkansas and Oklahoma and in the Marathon Uplift of  Deposited in the Devonian Period and the early Mississippian Subperiod some 410 to 325 million years ago and subjected to uplift and folding during the Ouachita orogeny of the Atokan Epoch (early Pennsylvanian Subperiod), Novaculite is a very tough stone that is resistant to erosion and thus, the various layers of Novaculite stand out as ridges in the Ouachita Mountains. Thus, due to both its availability and its composition, it has been mined since ancient times for use as arrowheads and spear heads as well as in more modern times for use as sharpening stones.
Diamond hones are made from very small, industrial grade, diamonds adhered to the face of a metal or plastic plate. Also, because Diamonds are so much harder than any of the other sharpening materials, they tend to cut very fast and last much longer than the other whetstone materials. But, they are also often more expensive to purchase. In addition, Diamond Stones generally consist of three different styles consisting of a solid metal plate coated with an adhesive and diamond dust with holes in the plate to allow the swarf to escape, a solid plate without holes for sharpening tools with corners that might catch in the holes, and a plastic plate with islands of exposed plastic interspersed with the adhesive and diamond dust to act as a lubricant.
1. Diamond Stones. I’ve used two, many years ago, to sharpen steel knives & found that the diamond coating wore away. They did work well at first, but then I was sharpening on the backing material. This puzzled me, because diamond is harder than steel, but have only recently read that the diamond particles are torn off the backing material because they stick to the softer steel. One of the issues with water stones is that they will wear into a hollow very quickly. Although they cut rapidly and are capable of producing a super fine edge, they should be flattened every time they’re used. This can be done in a variety of ways but the best method is to use a dead flat ceramic block over which the waterstone is rubbed. I've seen a skilled hand put a very sharp edge on with a 600 grit. This 1000 grit is forgiving yet effective. Keep it wet, lock your wrists, and don't rush it - you'll get your knives sharper than you could with a draw-through sharpener.
