When the stone is intended for use on a flat surface, it is called a Bench Stone. On the other hand, small, portable, hand-held stones are referred to as Pocket Stones. Also, because Pocket Stones are smaller than Bench Stones, they are more easily transported but, they also present difficulty in maintaining a consistent angle and even pressure when attempting to sharpen longer blades. Consequently, Bench Stones are commonly used at home or in camp whereas, Pocket Stones are generally reserved for honing an edge in the field.
But if you start mixing brands or systems, you can get in trouble. Here’s an example: Say you want to use a soft Arkansas oilstone as your coarse stone and an extra-fine India (aluminum oxide) stone to finish things up. Well good luck , both of these stones are the same grit (22 micron). Your edge won’t improve when you move to the extra-fine stone.
The following are my personal favourites and they are all synthetic stones, I do have experience with natural what stones but lets keep it simple, lets stick to synthetic water stones. Believe me, some of the world sharpest knives are sharpened solely on synthetic stones. Here are my personal favourites, I use these water stones every day and the order is not necessarily in priority, they are all good.
1000 grit is fine for a kitchen knife. Finer grits are for woodworking tools such as chisels and plane irons. Unless you’re carving oak with your filet knife, you should be good. The physics of the cut is different. After honing a kitchen knife on a stone, a butcher’s steel is used to turn a microscopic burr along the edge of the blade, which is what cuts soft stuff like meat and tomatoes. The burr wears down regularly, and taking the steel to the knife turns it again. With practice, you can actually feel and hear when the steel turns the burr. You can feel it with your finger as a slight roughness. Eventually, the knife edge rounds, and you need to re-hone it on the stones. You’ll know it’s time when the steel won’t raise a burr anymore.
The most important aspect of a sharpening stone is the grit. If you have knives that have taken a beating and are either nicked up or really dull, you’ll need a courser stone to get it back into shape. And in order to put an exceptionally sharp edge on an already sharp knife, you’ll need a finer grit stone. If your knives are already in pretty good shape and just need a touch up, buying just a finer grit stone might be enough, but don’t think you can get away without a courser stone for knives that need more TLC. It is possible to buy a combination, or two-sided sharpening stone.

Bearing in mind that all of the information here is STRICTLY based on micron size. Binding agent, abrasive material, slurry, and the steel involved will all play huge rolls in what kind of finish you get off of the stones. I really can't think of a good, objective way to rate by "finish" since there are so many variables. I've been looking for another source to check those against, and I haven't spotted one as yet. If you can find a source, I'd be more than happy to update the grit ranges. An ideal one would be the Chosera catalogue or their own sales literature, but I haven't been able to locate that yet.

Simply applying light pressure is enough to sharpen on diamond sharpening stones. All you have to do is let the stone do the work for you. You can use a diamond sharpening stone when it is wet and when it is dry. The advantage of sharpening on a wet stone is that the stone is lubricated and that no sharpening residue is left behin. You should, however, remember that you need to use water and not oil. Oil can be inconvenient when sharpening and damage the surface when it isn’t properly cleaned. I really appreciate that it comes with the rubber bases! I am beginning my own woodworking shop after graduating from woodworking school and having sharpening stones is important as a first step. These are not the highest quality stones out there, but they are great value - reasonably high quality for a good price. In addition to this 3000/8000 stone I have a 250/1000 stone from Lee Valley. Together with these I've sharpened all the plain-edged knives in the house and will soon be moving on to the chisels and plane blades after I put a hollow grind on them with the bench grinder.
