After discussing the topic of grit coarseness and fineness we decided to come up with our own chart. Since one person's "fine" and one manufacturers "fine" may mean something completely different we established a 1 to 10 grit chart with 1 being the most coarse and 10 being the most fine. This allows you to better understand what each grit is used for and make a more educated buying decision.
Once you’ve decided to start sharpening your kitchen knives with a sharpening stone, you’ll need to take the necessary steps to actually get going. These steps include finding and buying the best sharpening stone for use at home, learning the basic technique involved in doing the sharpening, and then practicing enough times to get it right. (For the sake of the knives, we don’t recommend using your best kitchen knives for practice!)
You’ll know you’re reached a stopping point when you can feel the slight catch of the bevel on the edge of the blade, by carefully running your finger in the direction of the blade, or by cutting through a sheet of paper. When the knife cuts cleanly through the paper, it’s time to hone the blade. Read our guide for more information about honing vs sharpening.
This article is not about how to sharpen a knife, check this article instead, but briefly, a coarse stone is critical, it has the potential to raise a Burr quickly and make a dull knife sharp quickly. The correct use of pressure enables us to form a burr, remove the burr and then do some coarse stone refinement and thus create a very sharp knife. This sensation is motivation, it is a confidence builder and will enhance your sharpening experience, so believe me when I say that a coarse stone is your first priority. I recommend a 400, 600 or 800 grit. After that, depending on the knives you are sharpening strive to obtain stone combination, such as a 400 – 1,000 – 5,000 grit three stone combination is going to allow you to achieve knives sharper than most people have ever seen.
Aluminum Oxide stones range from 150 grit to 280 grit and cut aggressively but not quite so much as Silicon Carbide. The medium (240 grit) would be considered "coarse" for sharpening kitchen knives, and the fine would be considered "medium". They are considered an "oil stone" but work just fine with water, Unfortunately Norton's stones come pre-oiled so I'd scrub it well with a strong kitchen cleanser before each use until the oil is mostly gone.
When a whetstone is used to cut metal, it acts like sandpaper by removing small particles of metal (aka “swarf”) with each pass of the blade over the stone. Therefore, whetstones with more coarse grits cut faster than those with finer grits and, at the same time, soft whetstones cut faster than hard whetstones because each pass of the blade over both types of whetstones not only removes fine particles of metal from the blade, it also removes fine particles from the surface of the whetstone (aka “slurry”) which continuously exposes new cutting crystals. However, if the swarf is allowed to build up on the surface of the whetstone during sharpening, it will clog the stone and drastically diminish its effectiveness. Therefore, some whetstones require water to lubricate the stone and suspend the swarf whereas, other whetstones require oil to lubricate the stone and suspend the swarf.
A new, or even experienced woodworker may be forgiven for finding the whole area of sharpening stones confusing. With so many different types available it becomes very difficult to know where to start. This buying guide will primarily examine the stones sold by Axminster. But, at the same time, will briefly explore some of the many alternative stones which the craftsperson might consider.

Different knives are sharpened differently according to grind (edge geometry) and application. For example, surgical scalpels are extremely sharp but fragile, and are generally disposed of, rather than sharpened, after use. Straight razors used for shaving must cut with minimal pressure, and thus must be very sharp with a small angle and often a hollow grind. Typically these are stropped daily or more often. Kitchen knives are less sharp, and generally cut by slicing rather than just pressing, and are steeled daily. At the other extreme, an axe for chopping wood will be less sharp still, and is primarily used to split wood by chopping, not by slicing, and may be reground but will not be sharpened daily. In general, but not always, the harder the material to be cut, the higher (duller) the angle of the edge.
When sharpening a knife, you're actually grinding away the existing blade to create a new edge. This is evidenced by the fact that upon completion, you can find tiny metal filings, called swarf, when wiping down the stone. Because the metal blade is actually being ground away, a high importance is placed on the technique and consistency of drawing a knife over the stone.
As opposed to water whetstones that require you to pre-soak the stone, the Norton oil stone is pre-filled with oil to save time and eliminate the need to pre-soak it prior to use and the lubricant stays on the surface during sharpening.  The oil also prevents metal from bonding with the abrasive surface by flushing away dislodged abrasive and metal chips.
A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. To find the proper angle, hold the knife horizontally with the edge touching the steel. Move the spine upward to create a 45-degree angle, and then half that again for your optimal sharpening angle.
Medium grit stone works as well as some of the more expensive ones. Perhaps it doesn't cut as fast as a shapton or norton, but it builds up a nice mud leaves a pretty refined edge. Of course you could improve with a 4k-6k stone, but many would be happy with the edge this 1k leaves. I sharpened 3 knives in my set in about an hour. My slicer needed quite a bit of metal removed to fix some edge chipping and this stone did the job, although it took 15-20 minutes of work.
If you only have one, it would be 1000. Personally, I have one much rougher to rehab knives with chips only. I also have an 8000 stone for final polish and a strop to finish. If you only used a 1000, it would probably work 80% as well as one that was refined a bit more. Does that last bit really matter? Not much, but I find that I can cut onions without tears with a very sharp knife.
Now move the blade – with a little pressure – in regular movements up and down along the sharpening stone. Always maintain the angle between the blade and stone. You will notice a burr become visible after five or so movements. Mentally divide the blade into three sections if the knife has a large blade. Always start with the tip and work back towards the bolster.
Water stones can also be made out of natural or synthetic materials and they are fast becoming the most popular type of whetstone as they only require the use of water to lubricate the stone. They are not as messy to work with as an oil stone and deliver fast sharpening results but for even better results, soak the stone in water for 5 or 10 minutes.
When the stone is intended for use on a flat surface, it is called a Bench Stone. On the other hand, small, portable, hand-held stones are referred to as Pocket Stones. Also, because Pocket Stones are smaller than Bench Stones, they are more easily transported but, they also present difficulty in maintaining a consistent angle and even pressure when attempting to sharpen longer blades. Consequently, Bench Stones are commonly used at home or in camp whereas, Pocket Stones are generally reserved for honing an edge in the field.

Prior to using any kind of sharpening stone, it is advised that individuals soak the sharpening stone in light machine oil or household oil for at least 12 hours before being used. Before being used, it is advisable to wipe the surface of the sharpening stone to get rid of grime, grit or dirt that may have accumulated overtime during the time of storage.


The word “Novaculite” is derived from the Latin word “novacula”, which means “razor stone” and is essentially a metamorphic, recrystallized, variety of Chert composed mostly of microcrystalline quartz that is found in the found in the Ouachita Mountains of Arkansas and Oklahoma and in the Marathon Uplift of  Deposited in the Devonian Period and the early Mississippian Subperiod some 410 to 325 million years ago and subjected to uplift and folding during the Ouachita orogeny of the Atokan Epoch (early Pennsylvanian Subperiod), Novaculite is a very tough stone that is resistant to erosion and thus, the various layers of Novaculite stand out as ridges in the Ouachita Mountains. Thus, due to both its availability and its composition, it has been mined since ancient times for use as arrowheads and spear heads as well as in more modern times for use as sharpening stones.
In recent years, some whetstone manufacturers have started producing ceramic whetstones made from hard, ceramic, powders that are mixed with Aluminum Oxide and then sintered to form a solid. But, rather than using oil or water to lubricate the whetstone, ceramic whetstones are meant to be used without lubrication and thus, they provide a significant advantage for chefs who need to keep their knives sharp but, who do not have either the room or time for using a bench water stone. Thus, they are commonly available as either bench stones, pocket stones, round rods, or triangular rods.
Oilstones, like the Norton whetstone, can be made out of natural or synthetic material like Novaculite, Aluminium Oxide, or Silicon Carbide. As per the name, oilstones require the use of oil as you sharpen your knife's blade. This type of stone is slower at sharpening or honing a blade and it can be messy and you need to always have some oil on hand but it creates a nice sharp edge and a beautiful polish.

It’s a decent stone, especially at this price point. I like generally like King stones. Works fast and wears fairly well. The slurry isn’t as lush and thick as I’m accustomed to but no biggie, and the upside is that I can see my work and am less likely to scratch my blade surface. It’s still aggressive and a little less slurry and pressure seems to make a finer edge on this 1k. I’m no expert but it could be that technique is just improving. Makes a nice bevel. Also, it flattens quickly and isn’t too soft. The unfortunate thing is that it is glued to a cheap hard plastic base and you can’t access both sides of stone. Nonsensical design, but would be tolerable if the base itself were slip resistant. It’s annoying when working on larger and/or heavy blades, thus the lower rating. I had no problems when honing a straight razor or pocket knife. Again, I do like the stone, and it’s inexpensive.
You might not need to spend hundreds of pounds to get the best knife sharpener, but you do need to know what you're doing. Warner gave me a crash course in the technique. As a newbie to this method, it took a while to get used to (especially since Warner handed me a knife that had never previously been sharpened) but after half an hour's practice and a little encouragement, I got the hang of it. NOTES: It is impossible to make exact comparisons between all the different abrasives because different standards are used for average, minimum and maximum size, the percentage allowed outside those limits, and the distribution of sizes within those limits.  Sizes of 240 grit and larger (macrogrits) are determined by sieving, while sizes of 240 grit and smaller (microgrits) are determined by sedimentation. Both ANSI standards have a 240 grit.  European "P" sizes are for coated abrasives; "F" sizes are for bonded abrasives.

You can use a diamond sharpening stone when it is wet and when it is dry. The advantage of sharpening on a wet stone is that the stone is lubricated and that no sharpening residue is left behin. You should, however, remember that you need to use water and not oil. Oil can be inconvenient when sharpening and damage the surface when it isn’t properly cleaned. If you are using a dry diamond sharpening stone, we recommend that you often clean the surface of the stone. As such you remove the sharpening residue left behind keeping the stone is great condition.

Though "whetstone" is often mistaken as a reference to the water sometimes used to lubricate such stones, the term is based on the word "whet", which means to sharpen a blade,[1][2] not on the word "wet". The verb nowadays usually used to describe the process of using a sharpening stone is to sharpen, but the older term to whet is still sometimes used. The term to stone is so rare in this sense that it is no longer mentioned in for example the Oxford Living Dictionaries.[3][4] One of the most common mistaken idioms in English involves the phrase "to whet your appetite", too often mistakenly written as "to wet". But to "whet" quite appropriately means "to sharpen" one's appetite, not to douse it with water.

Chefs will do this every day, and there's no reason you shouldn't too. Before cooking, or after you've done the washing up, honing your knife will help keep it in good condition. "When you're using a honing steel, you're not actually removing any metal at all, just re-straightening that edge, to get it back in line," says Authbert. Remember that you'll still need to sharpen it every two or three months.
