Even with a badly-worn or even misshapen edge, you only need to work through at most 3 or 4 successive grits before honing. Although it's true that it's more efficient not to skip grits, it's a lot more expensive (and more hassle) to deal with a dozen or more grits than it is to work through just a few. So in practice, it doesn't make much difference whether your 600-grit stone is actually closer to 550-grit or 650-grit, because you're most likely going to skip at least a couple hundred grit every step along the way.
Push the point you want to sharpen with your fingers. While keeping the angle and pushing the point with your fingers, stroke the blade until it reaches the other edge of the whetstone, then pull the blade back until it reaches the edge of the whetstone. This back and forth is counted as one stroke. Repeat it for about five strokes until you can see or feel some small burrs (edge curvatures) Then move the position of your fingers to where you have not sharpened yet, and repeat this five strokes of sharpening processed from the tip to the base of the blade.

Ceramic whetstones are meant to be used without water or oil, which means they can be used almost anywhere and are ideal for chefs or cooks who have limited working spaces. They will give you a very sharp blade and as their surface is very hard they will maintain their flat surfaces over the long-term, but as they have a fine grit, they can break if you drop the stone.

Japanese whetstones are not only the preferred sharpening medium for fine Japanese knives, but are superior for all types of cutlery. When the block is intended for installation on a bench it is called a bench stone. Small, portable stones (commonly made of bonded abrasive) are called pocket stones. Being smaller, they are more portable than bench stones but present difficulty in maintaining a consistent angle and pressure when drawing the stone along larger blades. However, they still can form a good edge. Frequently, fine grained pocket stones are used for honing, especially "in the field". Despite being a homophone with wet in most dialects of modern English, whetstones do not need to be lubricated with oil or water, although it is very common to do so. Lubrication aids the cutting action and carries swarf away.
Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.
I first received my Kamikoto knife as a gift. I have found my new favorite knife! I am very pleased with the balanced grip, which in itself is a work of ergonomic art. So, as you can see, there are numerous different types and grades of whetstones on the market today and each has its advantages and disadvantages. Therefore, the right practice to choose the right sharpening stone for you is to choose a whetstone material based upon how fast you need to remove metal and how fine an edge you need. For instance, although they are often the most expensive type of whetstone, diamond hones generally cut the fastest even in their finer grits followed by Crystolon Stones and then India Stones which are then generally followed by Japanese Water Stones and then by Novaculite, Belgian Blue, and Coticule whetstones in terms of how fast they remove metal. However, it should also be noted that the rougher an edge is, the less sharp it is while, the more polished an edge is, the sharper it is and thus, rough edges are fine for some tools while other tools require a much finer edge and, hunting knives require the finest edge of all. Therefore, the trick to choosing the proper whetstone for any given sharpening purpose is to purchase multiple stones with varying grits to accomplish each given task from cutting an initial bevel or defining a damaged edge to refining an existing edge to polishing it. You might suspect this is an example of "You can't trust stuff on the Internet" but unfortunately it's more pervasive than that as this is also true of guides published in print, including those from the manufacturers themselves. So one has to be very careful about accepting any comparative information as definitive, although the defined grit size for any given product is more trustworthy (but not entirely reliable either).
$22 bucks for a large, 2 grit stone. Great for larger knives and I even sharpened my camp axe to shaving sharp with it. I saw reviews that said the bamboo base was non-slip. Not sure why no one else hasn't called that out. It certainly does slip when used on a counter top. But the bamboo base has a rubber insert between the stone and the wood. I remove the stone and rubber insert and use that on the counter top and then it's non-slip. Also I have used mouse pads and that works well.

This is an important but often confusing aspect of the sharpening process. When you sharpen knives, especially on coarser stones, you'll notice a burr form on the opposite side of the edge. It can be difficult to see, but easy to feel. Carefully feel for the burr by running your finger from the spine of the knife to the edge. The burr will jump from side to side as you sharpen each edge, and once you've felt the burr move to both sides, you can move to the next finer stone. Once you get to the finest grit, the burr will become smaller and smaller!
I really like this stone. The 1000/4000 grit combination is perfect for my needs. I'm a woodturner, and belong to a club that brings in professional turners from around the world. One had an eye opening test of sharpness. He stacked around 25 new razor blades in a box with one open side. The box assured that the blades were in perfect alignment. If you looked at the blades' sharp ends head on, all you saw was black. His point was that if you can see the edge, the blade is not sharp. Any reflection from the edge, again, facing it head on, is a dull spot. My long story leads to the fact that I was able to sharpen several knives to the point of not seeing the edge. This is not the stone to use if you are trying to remove nicks from a blade. A lower grit will do that job. This is for putting a fine, "invisible" edge on the blade, and with the right technique, that's what it will do. Another thing to consider is the fact that these stones are "sacrificial" A stone wears because it is deliberately giving up dull surface particles to expose the sharp ones below them. Anyone expecting a stone to last forever is mistaken. Bottom line? I think this is a great stone that takes my knives to the level of sharpness I need in both woodworking and cooking. I also like the rubber frame it sits in, giving you much better control over the stone. Your efforts can go into sharpening without having to steady the stone on your workbench or countertop.
Independent of all the different kinds of surface one can use to shape, clean, and sharpen tools -- and perhaps independent of whether said surface is motorized or not -- I have to admit to being a bit lost as to what grades of abrasive exist in what media which should be used for what part of the task, and so on. "Fine" and "extra fine" seem to be defined differently for every manufacturer or medium, and not all of them give numeric values on the abrasive scale which might make them comparable... and I'm not certain whether 600-grit diamond is really equivalent to 600-grit wet/dry sandpaper on a surface plate and how either compares to any of the natural stones which are referred to only by name..
I would recommend getting a stone with a lower grit (less than 800) after you get a polishing stone, as the main uses of a lower grit stone would be to take off a lot of metal very quickly (removing chips). Its better to get a bit of experience on something a bit slower (1000 grit) and learn to hold a steady angle before diving deep into lower grits. The only time I could have used a stone lower than 800 grit (I used a 500 grit) was when I was completely changing the edge on a Kasumi (59-60HRC) knife.
