Once you've sharpened one side, you need to flip over, but don't swap the hand gripping the blade – think of it a bit like going backhand with a tennis racket (see above). Lead with the heel this time, rather then with the blade, but repeat the process in three parts. After five strokes on each third of the blade, it's time to check your knife. It's not an exact science, and it all depends on how blunt your blade was to start with (mine was very blunt indeed). But if you sharpen fairly regularly, it should just take a few strokes. 

Now that you're holding the handle and the blade is in position, gently apply some pressure to the belly of the blade with your left hand fingers – "roughly the amount of pressure to semi depress a sponge," says Warner. Starting at the tip, glide the blade up and down the stone – around five strokes up and down is a good number. Then move to the middle – five more strokes. Finally five strokes up and down on the heel.


I really like this stone. The 1000/4000 grit combination is perfect for my needs. I'm a woodturner, and belong to a club that brings in professional turners from around the world. One had an eye opening test of sharpness. He stacked around 25 new razor blades in a box with one open side. The box assured that the blades were in perfect alignment. If you looked at the blades' sharp ends head on, all you saw was black. His point was that if you can see the edge, the blade is not sharp. Any reflection from the edge, again, facing it head on, is a dull spot. My long story leads to the fact that I was able to sharpen several knives to the point of not seeing the edge. This is not the stone to use if you are trying to remove nicks from a blade. A lower grit will do that job. This is for putting a fine, "invisible" edge on the blade, and with the right technique, that's what it will do. Another thing to consider is the fact that these stones are "sacrificial" A stone wears because it is deliberately giving up dull surface particles to expose the sharp ones below them. Anyone expecting a stone to last forever is mistaken. Bottom line? I think this is a great stone that takes my knives to the level of sharpness I need in both woodworking and cooking. I also like the rubber frame it sits in, giving you much better control over the stone. Your efforts can go into sharpening without having to steady the stone on your workbench or countertop.
A 1000 grit wet stone is going to be plenty fine enough for most knives in a ‘typical' home kitchen. Finer hones are going to be used a lot less but will be useful useful for getting a super fine edge, on a fillet knife for example. (They are essential for a professional chef because the sharper blade will leave a slightly cleaner cut for visual appeal.)
I would recommend getting a stone with a lower grit (less than 800) after you get a polishing stone, as the main uses of a lower grit stone would be to take off a lot of metal very quickly (removing chips). Its better to get a bit of experience on something a bit slower (1000 grit) and learn to hold a steady angle before diving deep into lower grits. The only time I could have used a stone lower than 800 grit (I used a 500 grit) was when I was completely changing the edge on a Kasumi (59-60HRC) knife.

We're in luck, because Christopher Schwarz wrote an article in which he compiled a list of sharpening products arranged by relative fineness, based on the abrasive sizes in microns. Note that he includes a disclaimer that he is only working from the advertised grits, not the actual grits. As Graphus pointed out, the same type of stone in the same grit from multiple manufacturers, and even from the same manufacturer, can vary. However, this is largely inconsequential because it isn't necessary to move through every successive grit when sharpening.

For instance, American Novaculite (aka Washita and Arkansas Stones) is a form of metamorphic Chert that produces some of the best known and best loved natural whetstones in existence. Then, there is a form of Belgian Coticule which has been known for providing extra-keen edges since Roman times and, there is a Japanese Siliciclastic sedimentary stone (aka Japanese Water Stones) which consist of a fine silicate particles suspended in a clay matrix. Plus, there are also various types of man-made whetstones available such as Silicon Carbide (aka Crystalon) stones and Aluminum Oxide (aka India Stones) as well as a synthetic Corundum (aka Ruby) rod and Aluminum Oxide impregnated ceramic rods as well as several different types of diamond hones.
The 240 grit whetstone from Sun Tiger is also quite soft and will also become dished fairly quickly. But it makes up for this by cutting very quickly and by proving useful for removing chips and nicks in the blades of chisels and knives. You can remove a chip in a knife within a few minutes, but with chisels or plane blades it is best to check often whether you haven’t dished the relatively soft stone. When you sharpen a knife, you will help the stone to stay flat for longer if you move the blade evenly over the whole stone. But if you need to sharpen a whole bunch of chisels, the stone may start out flat, cutting a nice even bevel on the first chisel, but be so dished by the last chisel that you would have to flatten the stone once more and start all over again. The softer the stone, the more it needs to be watched, and the more frequently it needs to be flattened. This is not everyone's cup of tea, but if you accept the need for this, you will enjoy the services of a wonderfully quick-working stone. The Sun Tiger 240 also needs much less pressure than, say, the Shapton 120. The softer stone simply grips and starts cutting from the first stroke.
Sharpening stones are graded by the size of the individual particles, or grit. In an artificial stone they are all the same. The grit falls through a sieve with a predetermined mesh size. Stones are also categorised in terms of ‘microns’. The classification can be a little confusing. Generally, a 220g stone corresponds approximately to a particle size of 60-80 microns A 1,000g stone is 15-25 microns. A 1 micron is roughly equivalent to a 10,000g finishing stone.

The stones from Shapton are probably the hardest of all Japanese sharpening stones. They will remain flat for a long time. They are therefore the best choice if you are looking for a relatively coarse stone that cuts quickly without having to be dressed repeatedly. The finer-grained stones also work very well. But Shapton stones do not provide the mirror finish you can achieve with softer stones.
A blade's sharpness may be tested by checking if it "bites"—begins to cut by being drawn across an object without pressure. Specialized sticks exist to check bite, though one can also use a soft ballpoint pen, such as the common white Bic Stic. A thumbnail may be used[3] at the risk of a cut, or the edge of a sheet of paper. For kitchen knives, various vegetables may be used to check bite, notably carrots, tomatoes, or cucumbers. In testing in this way, any nicks are felt as obstacles.

it's good, Came acceptably flat. I do wish that it was longer. and I have noticed that it is quite porous, Takes several days just to dry after using. This is something that may effect how you store the item and I found it to be rather inconvenient. Otherwise it's all good, doesn't wear TOO fast, but certainly faster than other high end stones. Cuts well for the price. Wish it gave more feedback, but again, the price is too good.
It’s a decent stone, especially at this price point. I like generally like King stones. Works fast and wears fairly well. The slurry isn’t as lush and thick as I’m accustomed to but no biggie, and the upside is that I can see my work and am less likely to scratch my blade surface. It’s still aggressive and a little less slurry and pressure seems to make a finer edge on this 1k. I’m no expert but it could be that technique is just improving. Makes a nice bevel. Also, it flattens quickly and isn’t too soft. The unfortunate thing is that it is glued to a cheap hard plastic base and you can’t access both sides of stone. Nonsensical design, but would be tolerable if the base itself were slip resistant. It’s annoying when working on larger and/or heavy blades, thus the lower rating. I had no problems when honing a straight razor or pocket knife. Again, I do like the stone, and it’s inexpensive. 

A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. To find the proper angle, hold the knife horizontally with the edge touching the steel. Move the spine upward to create a 45-degree angle, and then half that again for your optimal sharpening angle.
The smaller the angle between the blade and stone, the sharper the knife will be, but the less side force is needed to bend the edge over or chip it off. The angle between the blade and the stone is the edge angle – the angle from the vertical to one of the knife edges, and equals the angle at which the blade is held. The total angle from one side to the other is called the included angle – on a symmetric double-ground edge (a wedge shape), the angle from one edge to the other is thus twice the edge angle. Typical edge angles are about 20° (making the included angle 40° on a double-ground edge).[1] The edge angle for very sharp knives can be as little as 10 degrees (for a 20° included angle). Knives that require a tough edge (such as those that chop) may sharpen at 25° or more.

To take off the fine scratches and the burr left by coarser stones, and polish the surface, one can use stones starting around 2000 grain. Above that there is theoretically no upper limit, but at the same time stones above about #10000 provide no measurable practical improvement in the edge. It is also interesting to note that above #8000 grit, there is no Japanese measurement standard. With all the stones labelled as having a finer grit, one simply has to take the manufacturer’s word for it.
The most important aspect of a sharpening stone is the grit. If you have knives that have taken a beating and are either nicked up or really dull, you’ll need a courser stone to get it back into shape. And in order to put an exceptionally sharp edge on an already sharp knife, you’ll need a finer grit stone. If your knives are already in pretty good shape and just need a touch up, buying just a finer grit stone might be enough, but don’t think you can get away without a courser stone for knives that need more TLC. It is possible to buy a combination, or two-sided sharpening stone.

A sharpening steel is a type of hardened cylindrical rod used similarly to honing stones. For example, a butcher steel is a round file with the teeth running the long way, while a packer steel (used in the meat packer's industry) is a smooth, polished steel rod designed for straightening the turned edge of a knife,[7] and is also useful for burnishing a newly finished edge. Because steels have a small diameter they exert high local pressure, and therefore affect the knife metal when used with very little force. The composition of the stone affects the sharpness of the blade (a finer grain, usually, though not always, produces sharper blades), as does the composition of the blade (some metals take and keep an edge better than others). For example, Western kitchen knives are usually made of softer steel and take an edge angle of 20–22°, while East Asian kitchen knives are traditionally of harder steel and take an edge angle of 15–18°. The Western-style kitchen knives are generally in the range of 52–58 on the Rockwell scale, which denotes the relative hardness of a material.

$22 bucks for a large, 2 grit stone. Great for larger knives and I even sharpened my camp axe to shaving sharp with it. I saw reviews that said the bamboo base was non-slip. Not sure why no one else hasn't called that out. It certainly does slip when used on a counter top. But the bamboo base has a rubber insert between the stone and the wood. I remove the stone and rubber insert and use that on the counter top and then it's non-slip. Also I have used mouse pads and that works well.

Chefs will do this every day, and there's no reason you shouldn't too. Before cooking, or after you've done the washing up, honing your knife will help keep it in good condition. "When you're using a honing steel, you're not actually removing any metal at all, just re-straightening that edge, to get it back in line," says Authbert. Remember that you'll still need to sharpen it every two or three months.

Japanese water stones – both natural and synthetic – are known for their superior sharpening performance, not only for Japanese tools, but also on their Western equivalents. The loosely bonded abrasive grit is washed out very quickly, as it blunts during the sharpening process; this exposes new, sharp, particles that can get to work on the blade. Water stones are lubricated only with water! Never use oil!
"Sharpening is like a hangover cure," says Laurie Timpson, founder of Savernake Knives in Wiltshire. "If there was a cure and you knew about it, I'd stay at your house, crash on your sofa and have whatever it was when I woke up. Everyone would have it and there'd be no discussion. Prior to using any kind of sharpening stone, it is advised that individuals soak the sharpening stone in light machine oil or household oil for at least 12 hours before being used. Before being used, it is advisable to wipe the surface of the sharpening stone to get rid of grime, grit or dirt that may have accumulated overtime during the time of storage.
Once you’ve decided to start sharpening your kitchen knives with a sharpening stone, you’ll need to take the necessary steps to actually get going. All sharpening stones can be placed into two categories. Either natural, having been quarried from the ground, or synthetic, having been been manufactured. Before the industrial age, all sharpening stones were natural by default. Simply picking up a piece of common sandstone and stroking it along a sword blade may have been enough to produce an edge. The word “Novaculite” is derived from the Latin word “novacula”, which means “razor stone” and is essentially a metamorphic, recrystallized, variety of Chert composed mostly of microcrystalline quartz that is found in the found in the Ouachita Mountains of Arkansas and Oklahoma and in the Marathon Uplift of  Deposited in the Devonian Period and the early Mississippian Subperiod some 410 to 325 million years ago and subjected to uplift and folding during the Ouachita orogeny of the Atokan Epoch (early Pennsylvanian Subperiod), Novaculite is a very tough stone that is resistant to erosion and thus, the various layers of Novaculite stand out as ridges in the Ouachita Mountains. Thus, due to both its availability and its composition, it has been mined since ancient times for use as arrowheads and spear heads as well as in more modern times for use as sharpening stones.

While it may still feel like there is a lot to choose from, you don’t need a lot of of stones, you just a several good varieties to choose from. To summarize I will indicate below what my favourite stones are in each grit. Yes you can mix up the brands when sharpening but my recommendation is to buy a combination of 2-3 stones of the same brand and go from there.
Diamond stones offer one alternative to traditional sharpening stones and provide many advantages, the principal one being that they will remain dead flat, even after sustained use. A matrix of pure, monocrystalline diamonds is permanently bonded to a dead flat, nickel plated steel substrate. These stones are available in a wide variety of different formats, for example, double sided, bench whetstones, handled mini-hones or even credit card sized diamond plates to fit conveniently in your wallet!

Why, then, do so many of us shy away from the task? To put it bluntly, it's because it's a rather daunting process for the beginner. Your image of knife sharpening may consist of a hyper-masculine chef slashing away violently at a steel rod (we're looking at you, Gordon). I chose this stone specifically because its hard to gouge and because you can get some pretty awesome patterns on the stone (because of it having a white background and cutting greyish steel). I've heard that the cutting speed of the Shapton stones are comparable to the Naniwa Chosera (the line higher than the Superstones).
Just FYI; This is the #1 problem I see with most brand new kitchen knives. A blade that gets thick quickly past the cutting edge may shave hair and still be unable to produce clean cuts on food items because the thick area acts as a wedge and starts to either bind the blade or split the food like firewood rather than cutting cleanly all the way through.
Steeling helps maintain sharpness. This process realigns the edge, correcting for dulling causes such as a rolled edge. A sharpening steel is a type of hardened cylindrical rod used similarly to honing stones. For example, a butcher steel is a round file with the teeth running the long way, while a packer steel (used in the meat packer's industry) is a smooth, polished steel rod designed for straightening the turned edge of a knife,[7] and is also useful for burnishing a newly finished edge. Because steels have a small diameter they exert high local pressure, and therefore affect the knife metal when used with very little force. They are intended for mild steel knives that are steeled several times a day, but are not well suited for today's tougher and harder blade steels. Diamond steels are now available that have an industrial diamond coating and can remove blade metal as well as straighten, therefore used correctly they can re-profile a knife instead of just honing.

Very interesting. If you work flat, 45 degree is what I was taught. Love the wet stones, especially the oiled ones. The nice thing about the leather part, is the mirror finish on a razor sharp blade which is a must if doing fine wood working, carving etc. A rough blade simply does not have the fine detailed dexterity. I find that the oiled sandpaper can work great as well, but found that the refined clay bars (white refined fired clay rounds and flats etc) does a wonderful job of keeping those razor edges refined, smooth as possible and then one can high polish them for smooth cutting. Believe me, when working wood for a flute, one wants that refined edge.! Learning how to hone a blade on a flat surface teaches one to work outside without a table/wall handy too...:) But we all have to start somewhere!:) Anyway, great stuff and a great start for those who want more from their tools!:) Cheers!
Beginning on the right side of the knife, move from tip to heel and heel to tip, then flip the knife and repeat. For the left side, it’s opposite—start at the top of the stone to reach the heel area completely. So, you will move from heel to tip and then tip to heel. Remember to apply and release pressure as you did earlier, exactly the same as in Step 2, but with light, refining pressure.

When sharpening a knife, you're actually grinding away the existing blade to create a new edge. This is evidenced by the fact that upon completion, you can find tiny metal filings, called swarf, when wiping down the stone. Because the metal blade is actually being ground away, a high importance is placed on the technique and consistency of drawing a knife over the stone.
