Well made stone. Good quality. The flattening stone was a welcome bonus. The 3000 grit side is perfect for initial sharpening. A caution on the 8000 grit side - It is not remotely close to 8000 grit. It seemed closer to 4000 grit of a quality Japanese whetstone. I purchased a 6000 grit King S1 stone for final polishing. Stay away from the cheaper King 1000/6000 KW65 combination whetstone. That seems to use plastic binder which literally permanently clogs the 6000 grit side.
Natural Japanese waterstones are still available, though nearly all quarries are closed. However, there still exists a large quantity of mined stone. Quarries containing the finest stones have all but been exhausted. If one were to be found, it would cost a fortune. Even so, similar, less than perfect stones that are currently produced can still fetch well in excess of €400!
We're in luck, because Christopher Schwarz wrote an article in which he compiled a list of sharpening products arranged by relative fineness, based on the abrasive sizes in microns. Note that he includes a disclaimer that he is only working from the advertised grits, not the actual grits. As Graphus pointed out, the same type of stone in the same grit from multiple manufacturers, and even from the same manufacturer, can vary. However, this is largely inconsequential because it isn't necessary to move through every successive grit when sharpening.
As a professional culinarian who uses expensive knives and tools- even in my everyday life, this sharpening stone has become a “must have” in my arsenal. Whether I am restoring an older, well-worn blade back to its glory or simply keeping up with the everyday wear on my go-to knife, the 3000/8000 grit sharpening stone gives my knives the edge in the kitchen (all puns intended;)).
But if you start mixing brands or systems, you can get in trouble. Here’s an example: Say you want to use a soft Arkansas oilstone as your coarse stone and an extra-fine India (aluminum oxide) stone to finish things up. Well good luck , both of these stones are the same grit (22 micron). Your edge won’t improve when you move to the extra-fine stone.
