In addition, there are three broad grades of Japanese Water Stones consisting of the Ara-to (rough stone), the Naka-to (middle/medium stone) and, the Shiage-to (finishing stone). However, it should be noted that the various grades of natural Japanese Water Stones vary widely in both density and grit size from stone to stone and thus, they do not translate well to American or European abrasive standards. Furthermore, because they are significantly softer than Novaculite, Japanese Water Stones must be flattened more often and do not last as long as a either Novaculite or Coticule stones. But, because they form a slurry of fine particles when used, they also do a superior job of both cutting and polishing.

1. Diamond Stones. I’ve used two, many years ago, to sharpen steel knives & found that the diamond coating wore away. They did work well at first, but then I was sharpening on the backing material. This puzzled me, because diamond is harder than steel, but have only recently read that the diamond particles are torn off the backing material because they stick to the softer steel. Natural stones are quarried from deposits of a mineral called novaculite. The most available are called Arkansas Stones, and come in soft and hard grades, but Washita (coarser than soft Arkansas) and Queer Creek Blue (variable, but around hard white Arkansas) are also available. Novaculite has a mohs hardness of 6.5, equivalent to Rockwell Rc 69. Most knife blades are around 5.5 (Rc 59).
The diamond on top of the stone ensures that the surface is very hard. As such a diamond sharpening stone remains flat and will not become hollow like a water stone. For this reason diamond sharpening stones will last a very long time and help you to quickly sharpen your knives: a blunt blade will be razor-sharp in no time, even when you are sharpening hard types of steel.
The video above, from the How To You YouTube channel, explains everything you need to sharpen with a whetstone at home, and the best methods for doing so. Obviously, you’ll need a whetstone (as well as a few other things), and you’ll want to work near your sink or a bucket so you have easy access to water. Fill a container with water, then soak the whetstone in it until it stops bubbling. Inspect your blades for any trouble spots, and get to sharpening using the methods and motions described in the video; making sure to check your progress as you go. We’ve talked about sharpening knives with whetstones before, but this guide is a bit more thorough and the old video has since been removed.
I'm not sure what the purpose of the extra white stone is - it says it is to flatten, but IMHO it is not a great idea to flatten the stones with something that small. I have a separate diamond lapping plate with a large surface area that I use to flatten the stones. It might be useful for sharpening awkward edges, like scissors and secateurs, though!
The stones from Shapton are probably the hardest of all Japanese sharpening stones. They will remain flat for a long time. They are therefore the best choice if you are looking for a relatively coarse stone that cuts quickly without having to be dressed repeatedly. The finer-grained stones also work very well. But Shapton stones do not provide the mirror finish you can achieve with softer stones.
Shapton 1000 grit stone - Hard stone that cuts fast and is hard to gouge. I chose this stone specifically because its hard to gouge and because you can get some pretty awesome patterns on the stone (because of it having a white background and cutting greyish steel). I've heard that the cutting speed of the Shapton stones are comparable to the Naniwa Chosera (the line higher than the Superstones).
The newly designed dual-sided combination whetstone from Fallkniven features a super fine white ceramic stone (0, 1 micron) with a grit of 1400 to 2000 and the dark grey ceramic stone is made of synthetic sapphires (1 micron) and has a grit of 800-1000. There is no need to add any oil or water, just lay the blade on the stone, raise the blade's spine and deburr your blade on the grey side until it has a razor-sharp edge and then use the smooth white side to get a nice polished edge.
