The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it.
The dual-sided whetstone is made from durable silicon carbide and has 400 grit on one side to sharpen the dullest blades and 1000 grit on the other side to create a nice smooth finish once the blade has been sharpened. The stone also forms a nice slurry that helps polish the blade for a superb shine. The stone is meant to be used with water, not oil and for best results, simply soak stone for 5-10 minutes before use, and lubricate with additional water as needed when sharpening.
Vielsalm Coticule on the other hand generally occurs in much more narrow layers sandwiched between the slate layer and the Belgian Blue layer and thus, it is both less plentiful and more expensive than Belgian Blue stone. Also, Coticule is divided into different grades and sometimes displays blemishes on the surface due to its proximity to the slate layer. Furthermore, it is somewhat harder than Belgium Blue stone and, due to its brittleness, it is bonded to a substrate layer of hard slate prior to sale to prevent the stone from breaking during use.
The fit and finish on this product is amazing. He stone is beautiful and clearly high quality and very well cut. It’s different features on even such a small stone are huge. The leather cord and it’s unique knot is incredible. This is absolutely part of my edc, something I am happy to wear all the time. It’s useful and looks great too. Couldn’t be more happy with it.
I purchased this set together with the 400/1000 grit stone assuming that some of my knives were quite dull and would need work on a coarse grit stone. Premium Whetstone Sharpening Stone 2 Side Grit 400/1000 | Knife Sharpener Waterstone with NonSlip Rubber Base & Flattening Stone. This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.

You want sharpening stones that will be useful for the majority of your edges now, and that will remain useful as you expand both your tools and your sharpening toolkit in the future. Ending up with duplicate stones or ones that are no longer useful as you gain new knives or tools is a waste of money. The goal is to start with something that will stay with you as your needs develop.


Method 1: Use an Electric Sharpener. Quality electric sharpeners are an option, but I strongly discourage their use. First off, they remove a tremendous amount of material from your edge. Sharpen your knife a dozen times, and you've lost a good half-centimeter of width, throwing it off balance, and rendering any blade with a bolster (i.e. most high-end forged blades) useless. Secondly, even the best models provide only an adequate edge. If you don't mind replacing your knives every few years and are happy with the edge they give you, they'll do the trick. I really like this stone. The 1000/4000 grit combination is perfect for my needs. I'm a woodturner, and belong to a club that brings in professional turners from around the world. One had an eye opening test of sharpness. He stacked around 25 new razor blades in a box with one open side. The box assured that the blades were in perfect alignment. If you looked at the blades' sharp ends head on, all you saw was black. His point was that if you can see the edge, the blade is not sharp. Any reflection from the edge, again, facing it head on, is a dull spot. My long story leads to the fact that I was able to sharpen several knives to the point of not seeing the edge. This is not the stone to use if you are trying to remove nicks from a blade. A lower grit will do that job. This is for putting a fine, "invisible" edge on the blade, and with the right technique, that's what it will do. Another thing to consider is the fact that these stones are "sacrificial" A stone wears because it is deliberately giving up dull surface particles to expose the sharp ones below them. Anyone expecting a stone to last forever is mistaken. Bottom line? I think this is a great stone that takes my knives to the level of sharpness I need in both woodworking and cooking. I also like the rubber frame it sits in, giving you much better control over the stone. Your efforts can go into sharpening without having to steady the stone on your workbench or countertop.
Historically, there are three broad grades of Japanese sharpening stones: the ara-to, or "rough stone", the naka-to or "middle/medium stone" and the shiage-to or "finishing stone". There is a fourth type of stone, the nagura, which is not used directly. Rather, it is used to form a cutting slurry on the shiage-to, which is often too hard to create the necessary slurry. Converting these names to absolute grit size is difficult as the classes are broad and natural stones have no inherent "grit number". As an indication, ara-to is probably (using a non-Japanese system of grading grit size) 500–1000 grit. The naka-to is probably 3000–5000 grit and the shiage-to is likely 7000–10000 grit. Current synthetic grit values range from extremely coarse, such as 120 grit, through extremely fine, such as 30,000 grit (less than half a micrometer abrasive particle size).[citation needed]
The composition of the stone affects the sharpness of the blade (a finer grain, usually, though not always, produces sharper blades), as does the composition of the blade (some metals take and keep an edge better than others). For example, Western kitchen knives are usually made of softer steel and take an edge angle of 20–22°, while East Asian kitchen knives are traditionally of harder steel and take an edge angle of 15–18°. The Western-style kitchen knives are generally in the range of 52–58 on the Rockwell scale, which denotes the relative hardness of a material.

Very interesting. If you work flat, 45 degree is what I was taught. Love the wet stones, especially the oiled ones. The nice thing about the leather part, is the mirror finish on a razor sharp blade which is a must if doing fine wood working, carving etc. A rough blade simply does not have the fine detailed dexterity. I find that the oiled sandpaper can work great as well, but found that the refined clay bars (white refined fired clay rounds and flats etc) does a wonderful job of keeping those razor edges refined, smooth as possible and then one can high polish them for smooth cutting. Believe me, when working wood for a flute, one wants that refined edge.! Learning how to hone a blade on a flat surface teaches one to work outside without a table/wall handy too...:) But we all have to start somewhere!:) Anyway, great stuff and a great start for those who want more from their tools!:) Cheers!
The most important aspect of a sharpening stone is the grit. If you have knives that have taken a beating and are either nicked up or really dull, you’ll need a courser stone to get it back into shape. And in order to put an exceptionally sharp edge on an already sharp knife, you’ll need a finer grit stone. If your knives are already in pretty good shape and just need a touch up, buying just a finer grit stone might be enough, but don’t think you can get away without a courser stone for knives that need more TLC. It is possible to buy a combination, or two-sided sharpening stone.
Honing is kind of like dusting the furniture while sharpening is more like reupholstering the furniture. Honing is purely a maintenance activity that should be regularly practiced to make sure the blade is clean and sharp as can be every time you use it. Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.

If you don’t have a problem with the water-lubrication system in your working environment, Waterstones is the most common and affordable models to obtain. They are available in various abrasive grit grade from coarse to extra fine mesh. They generally made by Aluminum Oxide, which provides faster cutting. The downside of the Waterstone, they wear down more quickly as the impact of the old abrasive materials that break the stone itself. It is why Waterstone requires frequent flattening to keep it evenly. It is recommended you have one of diamond stones to help you for regular flattening become easier.

Some of the videos I watched suggested soaking the stone for 12-15 minutes prior to use. One suggested using vegetable oil on the surface versus water/soaking (I used water and presoaking it for 15-minutes). So instead of a simple 'out-of-the-box-and-use' approach, it required a bit of research before sharpening a knife. Otherwise I would have given this product a 5-star rating.

In most cases the most the average person at home can do is either hone their blade with a honing steel, which straightens and lines up the blade’s edge, but it doesn’t sharpen it. A: Most chefs have their own personal favorite and that’s what it comes down to for just about everybody; personal choice. If you’re the kind who likes to get personally involved in the process you might want to opt for a stone or stick knife sharpener.  These will allow you a certain amount of satisfaction knowing it was your expertise that produced the razor sharp edge. Others, however, are quite content to let the machine do the work and that’s fine too.

Put the pointed, narrow end of the sharpener up against the open end of the gut hook. The narrow, pointed end of the sharpener should face in toward the thickness of the blade, away from the edge of the gut hook. Match the angle of the sharpener to the original edge angle. This will maintain the correct sharpening angle and prevent you from getting cut by the blade tip. Hold the same angle when sharpening each side of the gut hook.
