So, as you can see, there are numerous different types and grades of whetstones on the market today and each has its advantages and disadvantages. Therefore, the right practice to choose the right sharpening stone for you is to choose a whetstone material based upon how fast you need to remove metal and how fine an edge you need. For instance, although they are often the most expensive type of whetstone, diamond hones generally cut the fastest even in their finer grits followed by Crystolon Stones and then India Stones which are then generally followed by Japanese Water Stones and then by Novaculite, Belgian Blue, and Coticule whetstones in terms of how fast they remove metal. However, it should also be noted that the rougher an edge is, the less sharp it is while, the more polished an edge is, the sharper it is and thus, rough edges are fine for some tools while other tools require a much finer edge and, hunting knives require the finest edge of all. Therefore, the trick to choosing the proper whetstone for any given sharpening purpose is to purchase multiple stones with varying grits to accomplish each given task from cutting an initial bevel or defining a damaged edge to refining an existing edge to polishing it. There will be a drawer that extends into the mechanism under the abrasives. Any detritus from the sharpening process drops into this drawer. Exactly where the drawer is located will differ from sharpener to sharpener but it shouldn’t be hard to find. Remove the drawer flick any material into the wastebasket and then wipe out the drawer with a damp cloth or tissue. You may want to use work gloves and goggles to protect your hands and eyes from any loose metal shavings. Once the drawer is clean and dry replace it. The exact means by which the sharpening mechanism itself is cleaned will vary from manufacturer to manufacturer. Consult your owners guide for specific details. Make sure you don’t introduce any grease or other lubricants into the sharpener unless specifically directed to do so by the owner’s manual. Also, the outside of the sharpener should come perfectly clean with just a damp cloth. Avoid using commercial cleaners or abrasives of any kind.
Aluminum-Oxide oil stones are very popular man-made sharpening stones produced by an abrasives company called Norton and which are commonly called India Stones. Generally less expensive than Arkansas stones (aka Novaculite), these stones are graded coarse, medium, and fine and are designed for fast cutting. Yet, when the fine grit is used, they can also produce a relatively fine edge. Also, because India Oil Stones are both softer and coarser than Arkansas Stones, they are commonly used in conjunction with Novaculite to cut the initial edge bevels or, repair extremely dull or damaged edges before refining and polishing the bevel with an Arkansas Stone.

Honing steels are another story altogether. Honing steels are those instruments that look light a saber (light or otherwise) which you use to gussy up the edge of the blade periodically before using it. These do wear out every few years or less, depending on how often you use them. If you are unsure whether your honing steel is worn out run your finger around it. If it feels smooth all the way around then it’s time for a replacement. Not to worry though, they’re really affordable. One thing you may want to keep in mind about honing steels is that they typically won’t do much to hone the edge of some super hard knives, such as Japanese Global brand knives.

Sharpening stone/whetstones. Just as there are dozens of different ways to sharpen a knife, there are dozens of different sharpening stones. There are Japanese water stones, stones with diamond encrusted surfaces, and stones with different grades of grit. Again, choosing a stone is a matter of function and preference. Play around with different kinds of stones to find the one that gives you the results you’re looking for.

The stick – With a stick sharpener hold the sharpener in front of you (facing away from you) with one hand and the handle in the other hand. Hold the base of the knife against the base of the tip at a slight angle and then push the blade along the stick pulling it across the stick at the same time. The tip of the blade should cross the end of the stick. To sharpen the other side of the blade place it under the stick and repeat the process making sure to reverse the angle at which you are holding the knife against the stick.

The DuoSharp Plus stones are nicely sized at 8” long by 2 5/8” wide and have two grits on each stone to maximize value. The Plus in the name refers to an area of continuous grit in the otherwise interrupted grit surface of the stone. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.

You've acquired a good chef's knife, you're using it almost daily to make tasty dinners for the family, and it's stored in a nice knife rack or a magnet for safekeeping. So why stop there? Keeping that knife's edge fine will make cooking not only safer but, let's face it, much more fun. Once the burr is removed, it's time to test the sharpness with paper. Hold a piece of newspaper at about 45°, with a bit of tension, and slash lightly with each point of the blade. If it cuts through easily, your knife's sharp. Warner speedily lacerated his newspaper, but I of course struggled. There is an element of technique involved, he reassured me.

Historically, there are three broad grades of Japanese sharpening stones: the ara-to, or "rough stone", the naka-to or "middle/medium stone" and the shiage-to or "finishing stone". There is a fourth type of stone, the nagura, which is not used directly. Rather, it is used to form a cutting slurry on the shiage-to, which is often too hard to create the necessary slurry. Converting these names to absolute grit size is difficult as the classes are broad and natural stones have no inherent "grit number". As an indication, ara-to is probably (using a non-Japanese system of grading grit size) 500–1000 grit. The naka-to is probably 3000–5000 grit and the shiage-to is likely 7000–10000 grit. Current synthetic grit values range from extremely coarse, such as 120 grit, through extremely fine, such as 30,000 grit (less than half a micrometer abrasive particle size).[citation needed]
The Sharpening and Specialty lines of waterstones from Naniwa are available in several packages of three to five stones. The Specialty line is the same as the Sharpening line, but half the thickness and therefore less expensive. Both the Sharpening and the Specialty stones are 8 1/4" long by 2 3/4" wide, amply sized for most knives and tools. These are a higher grade stone that do not require soaking before use. While you would need a flattening stone in addition, these kits are a good way to enter into premium grade waterstones.
I've been using this stone for months and have started to find that, while the fine side does provide a nice sharp edge, the 400gr side is wearing my knives unevenly, which causes me to be unable to finely sharpen the entire length of the blade when moving to the fine side. The logo that is put in the middle of the 400gr side of the knife is causing more material to be removed than the rest of the blade when I'm sweeping across. I even verified this by going straight down the length of the fine side and watching the wear pattern come from the material coming off of the knife onto the stone.

Steeling helps maintain sharpness. This process realigns the edge, correcting for dulling causes such as a rolled edge. A sharpening steel is a type of hardened cylindrical rod used similarly to honing stones. For example, a butcher steel is a round file with the teeth running the long way, while a packer steel (used in the meat packer's industry) is a smooth, polished steel rod designed for straightening the turned edge of a knife,[7] and is also useful for burnishing a newly finished edge. Because steels have a small diameter they exert high local pressure, and therefore affect the knife metal when used with very little force. They are intended for mild steel knives that are steeled several times a day, but are not well suited for today's tougher and harder blade steels. Diamond steels are now available that have an industrial diamond coating and can remove blade metal as well as straighten, therefore used correctly they can re-profile a knife instead of just honing.
