In most cases the most the average person at home can do is either hone their blade with a honing steel, which straightens and lines up the blade’s edge, but it doesn’t sharpen it. Alternatively you could run it through a handheld or electronic sharpener, but depending on the model you use it can do more harm than good.

This coarse grit whetstone is great for prepping old and dull knives that need to be sharpened with a fine grit stone. One of my good knives edge looked like someone had tried to chop barbed wire. After ten minutes on each side of the stone, the edge was smooth and free of imperfections. After it hit the knife with the fine grit stone, I was cutting onions and apples like hot butter! I would soak this stone for 12-24 hours before using. It sucks water like a sponge. The surface needs to be damp when you sharpen.

Beginning on the right side of the knife, move from tip to heel and heel to tip, then flip the knife and repeat. For the left side, it’s opposite—start at the top of the stone to reach the heel area completely. So, you will move from heel to tip and then tip to heel. Remember to apply and release pressure as you did earlier, exactly the same as in Step 2, but with light, refining pressure.
The coarse stone will cut the metal off quicker but it is going to give you a rougher edge but that way the job gets done quicker, without the oil. It is not as messy. This is just a real simple set up. If you do wood work you can make a little wooden box and rout it out. In this particular case it is just a 2x4, stone traced out, finishing nails tapped down so they are deeper than the stone so when you drop the stone in, if you are at a workbench you can C-clamp it down in place or you can hold on to it.

I can personally verify that this will get your knives very sharp. I will spare you all the gory details, but the picture is of the instructions the ER sent me home with after stopping the bleeding and patching me up. I have to say, that’s not what I had in mind regarding “Thanksgiving tips”. So: not only will knives slide easily through spinach, but they will go through finger and fingernail like a hot knife through butter after being sharpened by this whetstone. Very clean, straight cut. Impressive, really. Just take it slow and don’t be a moron like me.
As you probably have guessed, knives are easier to sharpen on longer stones. The width of the stone is less important than the length when sharpening knives. The longer stone allows for longer sharpening strokes and contributes to faster sharpening. The longer strokes mean fewer strokes across your stone, making it easier to maintain a consistent sharpening angle. As a rule of thumb, a small knife can easily be sharpened on a large stone, but a large knife cannot easily be sharpened on a small stone.

Vielsalm Coticule on the other hand generally occurs in much more narrow layers sandwiched between the slate layer and the Belgian Blue layer and thus, it is both less plentiful and more expensive than Belgian Blue stone. Also, Coticule is divided into different grades and sometimes displays blemishes on the surface due to its proximity to the slate layer. Furthermore, it is somewhat harder than Belgium Blue stone and, due to its brittleness, it is bonded to a substrate layer of hard slate prior to sale to prevent the stone from breaking during use.
I would say they are worth the money. Go for it. I took a blunted Pampered Chef kitchen knife from completely dull to razor sharp in about an hour (of bumbling and repairing mistakes LOL) heavy grinding. If you have a severely damaged blade, grab one of those cheesey two sided stones from Harbor Freight to do your heavy grinding. From there these stones will work very well.

This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.

Sharp knives make the culinary world go round but finding the best knife sharpener isn’t as simple as walking into the store (do people still walk into stores?) and grabbing the first sharpener that presents itself. There are different types of electric sharpeners, some that are straightforward and some whose sharpening process involves as many as 3 or 4 stages. If you’re looking to keep things simple by using a sharpening stone well, there are 3 different types of them as well – oil, water and diamond – and they each have their pros and cons. So it can be confusing.

TO USE: Soak stone in water for no more than 5-10 minutes. Place stone on a damp cloth with the courser 400 grit side (dark green) facing up. Hold the knife so that it’s flat and perpendicular to the block, with the blade facing left. Holding the knife at a 20-degree angle, slowly sweep the edge of the blade from left to right down the length of the stone and continue until sharp. If stone starts to feel too dry, add more water. Be patient and take your time. Flip knife over and repeat on the other side (now moving from right to left). Be sure to sharpen both sides evenly. To polish the blade further, flip stone over to the fine 1000 grit side (light green) and repeat the process. When blade is honed to desired sharpness, wash and dry your knife. To clean your stone, simply rinse with water, wipe away any remaining metal residue with a rag, rinse again, then dry.


When attempting to choose a whetstone for sharpening your favorite knife, the number of choices can be mind boggling. In fact, sharpening stones are divided into four distinct categories consisting of natural whetstones and manufactured whetstones which, in turn, are divided into two other categories consisting of oil stones and water stones. Then, there are numerous different varieties of natural whetstones consisting of several different materials that are quarried from different places around the world as well as several different types of man-made whetstones!
The stick – With a stick sharpener hold the sharpener in front of you (facing away from you) with one hand and the handle in the other hand. Hold the base of the knife against the base of the tip at a slight angle and then push the blade along the stick pulling it across the stick at the same time. The tip of the blade should cross the end of the stick. To sharpen the other side of the blade place it under the stick and repeat the process making sure to reverse the angle at which you are holding the knife against the stick.

Oil stones have been around a long time, and while not as popular as in the past, they are still a practical option. Not as fast as the other stones, they are easy to use and their lower price makes them a good value for the budget conscious. With oil stones, the relation of the types and grits can be confusing. Our article, Difference in Sharpening Stone Materials, provides a more in depth explanation, but in general an India stone or two combined with an Arkansas stone is a good combination to start with.
To use a whetstone you run the knife's blade back and forth across the stone's surface and due to the constant friction with the stone, which acts like a piece of sandpaper, the knife's edge becomes razor sharp and has a brilliant mirror shine. If you are a beginner at using a whetstone it can a take a while to master the sharpening process, so here is a video to help you with your sharpening stone skills.
To take off the fine scratches and burrs left by coarser stones, and to polish the surface, you can use stones starting at around 2000 grit. There is theoretically no upper limit, but stones above about 10000 grit achieve practically no measurable improvement in the edge. It is also interesting to note that above 8000 grit, there is no Japanese measurement standard. For stones labelled as having a finer grit, you simply have to take the manufacturer's word for it.

Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.
An extremely well written and informative article on sharpening. Overtime we all get to love certain stones for our sharpening needs. I am a huge coticule fan, and although i have used all the others, i always come back to this natural stone above all others. Still trying to figure if i chose it or it chose me! NEver the less there are so many options out there it is not hard with a little time and effort to find the right combination for your needs.
Over the course of two days I re-sharpened nearly a dozen old blades, including removing the secondary bevel on an old stainless Ontario saber-grind Navy diver's knife, convexing the edge on flat ground 1095 Schrade 55 that also came with a secondary bevel, and fixing a broken tip on an old Kershaw folder. These stones made quick work of the Schrade and Kershaw. Both had completely new edge geometry within 30 minutes apiece. The Kershaw looked like-new, as if the tip had never broken. And the Schrade cut much better than it's secondary bevel would previously allow, regardless of how sharp I got it with a ceramic rod and strops. The Ontario took a little more work, as it had been abused a little the last time I'd held it, over 25 years ago and was as dull as a case knife - one of the reasons I decided to go ahead and do a full saber grind - well, a slightly convexed saber, I suppose would be more accurate. But within under an hour of using the two stones and a couple leather strops (one with black compound, another with green), the Ontario was shaving sharp again too.
Works well. Just got it today, sharpened two pocket knives, one a 8Cr13MoV Chinese steel, the other s30v American steel The stone made short work of both steels (which were pretty sharp already). But notably was able to make the s30v hair shaving sharp easily, something I've had trouble with. Inexpensive and useful, I love this stone. It's not the Ninja sharp 8000+ grits that you can find, but for pocket knives and EDC, it's perfect and inexpensive. Get One!!!!!!!!!!!!
"How do I use this daunting metal rod?" I hear you ask. Well, it's not too hard, really. The best way for a beginner is to balance the steel on a surface with the tip secured by a damp tea towel. You want to get that angle right, whether it's around 15 degrees for a Japanese knife or 20 degrees on a German or French blade. Then swipe slowly down, away from you, making sure the whole blade is honed – around five swipes on each side should do. 
We tend to recommend natural Japanese water stones only to experienced users who are thoroughly familiar with the synthetic Japanese sharpening stones. Natural stones are not to everybody’s taste and there are inevitably many uncertainties with regard to their grit grade, which cannot be determined exactly, their hardness and their suitability for certain types of steel.
Now move the blade – with a little pressure – in regular movements up and down along the sharpening stone. Always maintain the angle between the blade and stone. You will notice a burr become visible after five or so movements. Mentally divide the blade into three sections if the knife has a large blade. Using even pressure, slowly drag the knife over the stone toward you down the length of the stone while simultaneously moving the knife such that the contact point moves toward the tip of the blade.

This is a great sharpener for budget conscious cooks. You can use it with equal facility whether you’re right or left handed, it has a convenient finger guard to cut down on accidents and most important, it only takes a few swipes on a regular basis to keep your knives in tip-top condition. It’s not glamorous. It won’t add anything substantive to your kitchen decor. But it will ensure your knives are always ready for whatever dish you have in mind.
Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently. 
Functionality – If you have experience with the stick or sharpening stone you likely don’t want or need anything else. If, however, you are in search of an electric-powered sharpener you’ll want to consider how many “stages” you need in your sharpener. In a typical 3-stage sharpener the first stage is the coarsest and does most of the heavy lifting required to turn the edge from dull to sharp. The second stage will have finer grain sharpening wheels. These are used to hone the edge, that is, to smooth out the burrs left by the coarse first stage. A third stage will refine the edge even further and remove any debris left over from the sharpening process.
This is a good size stone and has the two different grits needed for knife sharpening. No instructions were included, but there are many websites with written and video instructions, so this is not an issue for most people. A fair amount of dust is generated during the sharpening process, so protect the work surface and wash the knife after sharpening is completed.

Personally, I bring the blade into the stone. Other people stroke the blade away from the stone. Both ways work, so just use whatever technique you prefer. If the knife blade is curved or if it’s longer than the stone, you’ll need to sweep the blade sideways as you work, so the entire edge is sharpened evenly. Apply moderate pressure as you sharpen. No need to bear down hard on the blade. After you make one stroke, start back at the beginning and repeat. Do this about 6-12 times.

A diamond plate is a steel plate, sometimes mounted on a plastic or resin base, coated with diamond grit, an abrasive that will grind metal. When they are mounted they are sometimes known as diamond stones.[12] The plate may have a series of holes cut in it that capture the swarf cast off as grinding takes place, and cuts costs by reducing the amount of abrasive surface area on each plate. Diamond plates can serve many purposes including sharpening steel tools, and for maintaining the flatness of man-made waterstones, which can become grooved or hollowed in use. Truing (flattening a stone whose shape has been changed as it wears away) is widely considered essential to the sharpening process but some hand sharpening techniques utilise the high points of a non-true stone. As the only part of a diamond plate to wear away is a very thin coating of grit and adhesive, and in a good diamond plate this wear is minimal due to diamond's hardness, a diamond plate retains its flatness. Rubbing the diamond plate on a whetstone to true (flatten) the whetstone is a modern alternative to more traditional truing methods.[13]

A: We’re all told that a sharp knife is safer than a dull knife yet most everyone knows that merely touching a sharp knife can often result in a painful cut while we can wrap our hand around a dull blade with little worry. So why would anyone in their right mind claim that a sharp one is safer than a dull one? To a certain extent it’s a matter of semantics for sure, because there is no denying you have to be extremely careful around really sharp knives. But at the same time there is a very good reason to consider a dull knife to be more of a safety hazard than a sharp knife.
High Grit Stones: These are also known as finishing stones with the number range going up to 8000, and give you a super refined edge.  They work great with Western knives as they cutting edge resembles a “U” as opposed to a “V”. If you are using your knife to cut meat, then you can happily stop at 4000 or 6000 grit. If you are only using it for vegetables or fruit go all the way to the 8000.
