The DuoSharp Plus stones are nicely sized at 8” long by 2 5/8” wide and have two grits on each stone to maximize value. The Plus in the name refers to an area of continuous grit in the otherwise interrupted grit surface of the stone. This area is for sharpening edges with fine points that might be difficult on the interrupted surface. A coarse/fine DuoSharp Plus stone is a good single stone to start a sharpening toolkit.

Be careful: Don’t move your fingers laterally along the edge, you’ll cut yourself. Feel for a rough area running from tip to heel. Again, it takes time to know what to expect because the best burr will be subtle. Just know that the bigger the burr, the more metal you are removing—more than necessary. Don’t worry, you won’t ruin the knife doing this. You’re learning here, and mistakes are part of the sharpening journey. Learn from them.

I'm a novice knife sharpener. I've had to unlearn what my grandpa taught me in order to use these. So far, I've had decent but mixed results. I've switched to my cheap 200/400-ish cheap tool stone from harbor freight for cutting a bevel when the blade has either been damaged or did not have a proper bevel. The 400/1000 grit stone in this kit is soft. Very soft. I have bowled it out several times. It makes keeping a steady angle difficult. But these stones at this price point are meant for learning, and for that they serve their purpose.
The dual-sided whetstone is made from durable silicon carbide and has 400 grit on one side to sharpen the dullest blades and 1000 grit on the other side to create a nice smooth finish once the blade has been sharpened. The stone also forms a nice slurry that helps polish the blade for a superb shine. The stone is meant to be used with water, not oil and for best results, simply soak stone for 5-10 minutes before use, and lubricate with additional water as needed when sharpening.

Cost – While you can get a perfectly serviceable sharpening stick or stone sharpener for short money and some very high-quality tabletop manual 2 and 3-stage sharpeners for less than $50, high-quality mechanical systems will often run you $200 or even more. While that’s not so much money it’s likely to impact the quality of your life it is a lot to pay to keep a decent edge on your knives. While how much you ultimately pay for a sharpener is entirely up to you, you may want to consider your commitment to cooking and how often you are actually liable to use the device. If this is your first sharpener you might also want to consider learning how to sharpen a blade using a classic stick or stone sharpener first, before deciding if moving up to a mechanical sharpener is the right thing for you.
I had wanted a pair of sharpening stones for a while, so was enthused to get this last week. I watched a bunch of YouTube videos on how to use them and a deburring strop I also bought and wow, my kitchen and pocket knives are now wicked sharp. Pro tip: if you post anything about it on social media, family and friends will almost surely volunteer their knives for more practice...

As you continue to repeat strokes on the first time, eventually a tiny burr will form on the other side of the blade. To check for it, place the blade on your thumb, and pull it backwards. If the burr has formed, it should catch slightly on your thumb (with really fine grit stones, say 2000 or above, you won't feel this). This may take up to 30 or 40 strokes, and is the indication that you should switch and start sharpening the other side.

When attempting to choose a whetstone for sharpening your favorite knife, the number of choices can be mind boggling. In fact, sharpening stones are divided into four distinct categories consisting of natural whetstones and manufactured whetstones which, in turn, are divided into two other categories consisting of oil stones and water stones. Then, there are numerous different varieties of natural whetstones consisting of several different materials that are quarried from different places around the world as well as several different types of man-made whetstones!
When starting out sharpening, it won’t be long before you hear about the “toothy” vs “polished” edge. It will suffice to know that a 1k stone is going to give you an edge that will perform beautifully as will a knife finished at 5k. There is a belief that a knife that has a highly polished finish, 5k and up will be so polished that it’s toothy goodness will be erased. This knife will not bite into the skin of a tomato for example because the edge is too polished, it will slide over the top. This is not always true, if the knife has been sharpened well, i.e. if Side A and Side B of the blade meet precisely at the Apex of the knife, that edge will slide into a tomato quite beautifully. I have seen many brand new Japanese knives with highly polished 8k edges that no tomato skin can stand up to.

"Sharpening is like a hangover cure," says Laurie Timpson, founder of Savernake Knives in Wiltshire. "If there was a cure and you knew about it, I'd stay at your house, crash on your sofa and have whatever it was when I woke up. Everyone would have it and there'd be no discussion. Everybody says they've created a perfect sharpening technique, and they haven't." 
But it's a different type of sharp, according to Joe Authbert, product development manager at ProCook. "What it does is add tiny little micro-serrations onto the edge of the blade." But fear not - your smart knife won't end up looking like a bread knife, as you'll be hard-pressed to spot the serrations. "If you looked at it under a microscope, on the cutting edge, there are these little lines that generate the sharpness, rather than a waterstone which is a smooth sharp edge," says Authbert. 
For instance, American Novaculite (aka Washita and Arkansas Stones) is a form of metamorphic Chert that produces some of the best known and best loved natural whetstones in existence. Then, there is a form of Belgian Coticule which has been known for providing extra-keen edges since Roman times and, there is a Japanese Siliciclastic sedimentary stone (aka Japanese Water Stones) which consist of a fine silicate particles suspended in a clay matrix. Plus, there are also various types of man-made whetstones available such as Silicon Carbide (aka Crystalon) stones and Aluminum Oxide (aka India Stones) as well as a synthetic Corundum (aka Ruby) rod and Aluminum Oxide impregnated ceramic rods as well as several different types of diamond hones.

I really like this stone. The 1000/4000 grit combination is perfect for my needs. I'm a woodturner, and belong to a club that brings in professional turners from around the world. One had an eye opening test of sharpness. He stacked around 25 new razor blades in a box with one open side. The box assured that the blades were in perfect alignment. If you looked at the blades' sharp ends head on, all you saw was black. His point was that if you can see the edge, the blade is not sharp. Any reflection from the edge, again, facing it head on, is a dull spot. My long story leads to the fact that I was able to sharpen several knives to the point of not seeing the edge. This is not the stone to use if you are trying to remove nicks from a blade. A lower grit will do that job. This is for putting a fine, "invisible" edge on the blade, and with the right technique, that's what it will do. Another thing to consider is the fact that these stones are "sacrificial" A stone wears because it is deliberately giving up dull surface particles to expose the sharp ones below them. Anyone expecting a stone to last forever is mistaken. Bottom line? I think this is a great stone that takes my knives to the level of sharpness I need in both woodworking and cooking. I also like the rubber frame it sits in, giving you much better control over the stone. Your efforts can go into sharpening without having to steady the stone on your workbench or countertop.
I like the fact that there are two different grits (can be seen as two colors). the black rubber feet stick to the kitchen granite top like glue. The 1000 does a pretty good job of getting a knife roughly there and the 4000 puts on a fine polish for razor a sharp edge. I would go the extra step of stropping the knife after the grinding operation for an extra sharp edge.
A common myth is that sharpening steels actually sharpen knives, and can replace stones or other sharpening devices. Steels actually hone a knife and help keep its edge if used regularly. A steel should be used before and after each knife use for proper maintenance. Easily enough, it's used the same way you use a sharpening stone. To find the proper angle, hold the knife horizontally with the edge touching the steel. Move the spine upward to create a 45-degree angle, and then half that again for your optimal sharpening angle.

I am a huge coticule fan, and although i have used all the others, i always come back to this natural stone above all others. Still trying to figure if i chose it or it chose me!
