The toughest angle to master is the angle at which you'll sharpen the edge of the knife. For a Japanese knife, that should be around 12-15 degrees. Before you reach for the protractor, a good test is to get roughly half an index finger's gap between the spine of the knife and the stone (see above). Remember to remove your finger before you start sharpening. For a Western-style knife, you want an angle of about 20°, so raise it ever-so-slightly higher.

I recommend keeping two stones in your kit. One with a medium grit (around 800 or so) to perform major sharpening jobs, and one with a fine grit (at least 2,000) to tune the edge to a razor-sharp finish. For real pros, a stone with an ultra-fine grit (8,000 and above) will leave a mirror-like finish on your blade, but most cooks won't notice the difference in terms of cutting ability.
Once the burr is removed, it's time to test the sharpness with paper. Hold a piece of newspaper at about 45°, with a bit of tension, and slash lightly with each point of the blade. If it cuts through easily, your knife's sharp. Warner speedily lacerated his newspaper, but I of course struggled. There is an element of technique involved, he reassured me. 
To use Al's method, take a black felt pen and shade in the bevel of the knife. Then take two strokes on the stone and examine the edge. If you have maintained the proper angle then all the black will be gone. If you see black on the top of the edge it means you are holding the back of the knife too far from the stone. If there is black on the bottom of the edge but the top is clean then you are laying the knife too flat on the stone and you need to raise it a bit. Repaint the edge and try it again. Once you discover what the right angle looks like then just maintain that.
A blade's sharpness may be tested by checking if it "bites"—begins to cut by being drawn across an object without pressure. Specialized sticks exist to check bite, though one can also use a soft ballpoint pen, such as the common white Bic Stic. A thumbnail may be used[3] at the risk of a cut, or the edge of a sheet of paper. For kitchen knives, various vegetables may be used to check bite, notably carrots, tomatoes, or cucumbers. In testing in this way, any nicks are felt as obstacles.

The more you use the sharpening stone; the edges of each particle within the stone tend to become slightly rounded over time. When you notice that it is taking much longer to hone blades and edges, it means you need to replace the stone with a new one. Sharpening stones come with decks that make it convenient to keep the tool in balance on the stone.
Method 3: Use a Sharpening Stone. This is the best method by far. Not only will it give you the best edge, it also removes the least amount of material. With a fine enough grit, your knife should be able to take hairs off your arm when you've finished. Additionally—and I'm not kidding about the importance of this one—the act of sharpening your knife will help you create a much stronger bond with your blade, and a knife that is treated respectfully will behave much better for its owner. The only problem? It takes a little know-how.

4. Start sharpening the first side of the blade. With your blade set at the prefect angle, you’re ready to start sharpening. Imagine you’re carving off a slim piece of the stone’s surface. Personally, I bring the blade into the stone. Other people stroke the blade away from the stone. Both ways work, so just use whatever technique you prefer. If the knife blade is curved or if it’s longer than the stone, you’ll need to sweep the blade sideways as you work, so the entire edge is sharpened evenly. Apply moderate pressure as you sharpen. No need to bear down hard on the blade. After you make one stroke, start back at the beginning and repeat. Do this about 6-12 times.

Cerax and Suehiro stones from Suehiro are a little harder, and as such do not wear down as quickly as the classic Japanese water stones. The 8000 grit stone will perhaps give you the best cutting edge with a mirror polish on chisels and similar blades. Suehiro also makes a small combination stone for those who do not sharpen tools all that often and are reluctant to spend extra for a Cerax stone.

1. Diamond Stones. I’ve used two, many years ago, to sharpen steel knives & found that the diamond coating wore away. They did work well at first, but then I was sharpening on the backing material. This puzzled me, because diamond is harder than steel, but have only recently read that the diamond particles are torn off the backing material because they stick to the softer steel. Before you start sharpening, soak the stone in water for around five to 10 minutes, until it absorbs the water and a liquid film appears on the surface. After soaking, splash some water on top, and re-splash during the process if it ever gets too dry. You'll get a dark, splotch of steel and stone building up on the stone while you're sharpening the blade. This is totally normal so just splash the stone with some water to clean it off and allow it to perform more efficiently.

The paper test - Remove your knife from the sharpener. Grab a piece of notebook paper and hold it vertically in your hand so that one edge is facing straight up. Now take the knife and push it down against this edge. If the blade cuts through without hesitation it’s sharp. If the paper simply crumples beneath the blade instead of cutting the blade needs a bit more work.
Beginning on the right side of the knife, move from tip to heel and heel to tip, then flip the knife and repeat. For the left side, it’s opposite—start at the top of the stone to reach the heel area completely. So, you will move from heel to tip and then tip to heel. Remember to apply and release pressure as you did earlier, exactly the same as in Step 2, but with light, refining pressure.
Place an old coffee mug upside down so that the bottom of the mug is exposed to the air. In a pinch, a coffee mug can serve as a surprisingly effective sharpening tool if you don't have any fancy equipment. The ceramic material of a mug is a material coarse enough to get good results. Indeed, some honing rods even use ceramic material to keep a blade homed in between sharpenings.

A: Most chefs have their own personal favorite and that’s what it comes down to for just about everybody; personal choice. If you’re the kind who likes to get personally involved in the process you might want to opt for a stone or stick knife sharpener.  These will allow you a certain amount of satisfaction knowing it was your expertise that produced the razor sharp edge. Others, however, are quite content to let the machine do the work and that’s fine too.

So you are going to start at the heel and you are going to time it so that it goes all the way across. You go from one side to the other. You also want to make sure that your stone, I am not going to use as much pressure as I normally would because I cannot mount it on this showcase, you want to alternate from side to side to keep your bevel centered. Some people will take and do three times on one side and then three times on the other, the problem is that your backhand is never as good as your forehand and you end up cheating and you are going to end up with a blade that is offset. That is going to take it and thin down, you are going to get a thin bevel right on the edge. Once you get that V established, you can go from the coarser side to the finer side.
