These are very popular stones. 8" Dia-Sharps have a single grit per stone making them more expensive, but at 8" by 3" they are wider than the 8" DuoSharps, offering a good working surface. So you are going to start at the heel and you are going to time it so that it goes all the way across. You go from one side to the other. You also want to make sure that your stone, I am not going to use as much pressure as I normally would because I cannot mount it on this showcase, you want to alternate from side to side to keep your bevel centered. Some people will take and do three times on one side and then three times on the other, the problem is that your backhand is never as good as your forehand and you end up cheating and you are going to end up with a blade that is offset. That is going to take it and thin down, you are going to get a thin bevel right on the edge. Once you get that V established, you can go from the coarser side to the finer side.

Siliciclastic stone is a clastic, noncarbonate, sedimentary stone that is almost exclusively silica-bearing and exists as either a form of quartz or, another silicate mineral. In addition, hardened clay is also a sedimentary stone but, it is formed from organic materials such as plant and animal matter and thus, it is much softer than Siliciclastic However, when silicon sediment is suspended in a clay matrix and then naturally hardened over thousands of years, it forms an excellent whetstone material; although, it is somewhat softer than Novaculite. Thus, because the geology of Japan once held large deposits of this type of stone it has been used for hundreds of years for sharpening tools, knives, and swords. However, unlike Novaculite, Belgian Blue, and Coticule, both natural and synthetic Japanese whetstones use water for lubrication and thus, they are commonly known as “Japanese Water Stones” because this type of stone is very porous. Thus, natural Japanese Water Stones must be soaked in water for up to twenty-four hours prior to use whereas, synthetic Japanese Water Stones can be soaked for only a few moments.
Once sufficiently wet, it's time to position the stone on something solid, so it doesn't move about during sharpening. I've always wanted to sharpen knives on water stones, and this set gave me the motivation to finally give it a shot. The price is amazing for the quality and content of the set. It comes with all the grits you need to sharpen anything... I usually start on the 400 grit if the knife is very dull, or directly on the 1000 grit if it's not too dull. The 3000 and 8000 grit stones are softer and ideal after the coarser stones. The online learning section is truly amazing, much better than I expected. A convenient place with instructional videos and many articles about knife sharpening. Only downside is that the knives are now so sharp I need to be very careful using them... but that's a good thing! I feel like I fell in love with knife sharpening again.
I purchased this set together with the 400/1000 grit stone assuming that some of my knives were quite dull and would need work on a coarse grit stone. Premium Whetstone Sharpening Stone 2 Side Grit 400/1000 | Knife Sharpener Waterstone with NonSlip Rubber Base & Flattening Stone. This is my first wetstone. First off I tried to sharpen my Chicago Cutlery boning knife. This knife is nearly thirty years old, has been abused in may ways and was quite dull. It was very difficult for me to get a burr on this blade, which I attribute to poor technique. Next I moved on to my Henckels Professional S paring and chef's knives. The paring knife was moderately sharp and was modestly improved after working over all three grits of stone. It would cut paper but again it was difficult to develop a burr with this blade. Undaunted I switched to the chef's knife. This knife is twenty years old and has never been professionally re-sharpened. I have sharpened it twice with a Lanksey sharpening system which marred the finish but did put a good edge on the blade. Lansky Standard Coarse Sharpening System with Fine Hones. The chef's knife was moderately dull and had several pits visible on the cutting surface. I modified my technique for passing the knife over the stone and worked the chef's knife over the 400 grit stone aggressively and eventually I was able to get a burr to form from the tip of the knife all the way to the handle. From there it was a simple process of reforming the burr on the 1000 grit stone and then finishing on the 6000. After sharpening, the chef's knife easily and cleanly slices a tomato with very light pressure and is in my opinion very sharp. Not sushi knife sharp but more than enough for the chopping and slicing I expect of it. I'm looking forward to going back and working both the boning knife and the paring knife over again. Don't expect a good result from this product the first time you use it. Watch videos on using a wetstone, expect to spend at least twenty minutes per knife at first, and practice forming a burr. If you can form a burr, you will be able to successfully sharpen your knife.

Once you get up to speed you’ll likely enjoy the process and at the same time achieve professional quality results time and again. Sure, it’s not fancy and doesn’t have a sleek, chrome plated design but it works.
A blade's sharpness may be tested by checking if it "bites"—begins to cut by being drawn across an object without pressure. Specialized sticks exist to check bite, though one can also use a soft ballpoint pen, such as the common white Bic Stic. A thumbnail may be used[3] at the risk of a cut, or the edge of a sheet of paper. For kitchen knives, various vegetables may be used to check bite, notably carrots, tomatoes, or cucumbers. In testing in this way, any nicks are felt as obstacles.
The more you use the sharpening stone; the edges of each particle within the stone tend to become slightly rounded over time. When you notice that it is taking much longer to hone blades and edges, it means you need to replace the stone with a new one. Sharpening stones come with decks that make it convenient to keep the tool in balance on the stone.
Once the burr is removed, it's time to test the sharpness with paper. Hold a piece of newspaper at about 45°, with a bit of tension, and slash lightly with each point of the blade. If it cuts through easily, your knife's sharp. Warner speedily lacerated his newspaper, but I of course struggled. There is an element of technique involved, he reassured me. 
Now it's time to polish. This is when you'll swap over from the coarse grit to the finer grit (make sure this side is wet, too). I found the knife still had a bit of grime on it, so I gave it a wipe clean beforehand. The motion is exactly the same as with sharpening, but you can apply slightly less pressure, and limit to roughly 30 strokes on each side. 
The dual-sided whetstone is made from durable silicon carbide and has 400 grit on one side to sharpen the dullest blades and 1000 grit on the other side to create a nice smooth finish once the blade has been sharpened. When a whetstone is used to cut metal, it acts like sandpaper by removing small particles of metal (aka “swarf”) with each pass of the blade over the stone. Therefore, whetstones with more coarse grits cut faster than those with finer grits and, at the same time, soft whetstones cut faster than hard whetstones because each pass of the blade over both types of whetstones not only removes fine particles of metal from the blade, it also removes fine particles from the surface of the whetstone (aka “slurry”) which continuously exposes new cutting crystals. However, if the swarf is allowed to build up on the surface of the whetstone during sharpening, it will clog the stone and drastically diminish its effectiveness. Therefore, some whetstones require water to lubricate the stone and suspend the swarf whereas, other whetstones require oil to lubricate the stone and suspend the swarf.
When starting out sharpening, it won’t be long before you hear about the “toothy” vs “polished” edge. It will suffice to know that a 1k stone is going to give you an edge that will perform beautifully as will a knife finished at 5k. There is a belief that a knife that has a highly polished finish, 5k and up will be so polished that it’s toothy goodness will be erased. This knife will not bite into the skin of a tomato for example because the edge is too polished, it will slide over the top. This is not always true, if the knife has been sharpened well, i.e. if Side A and Side B of the blade meet precisely at the Apex of the knife, that edge will slide into a tomato quite beautifully. I have seen many brand new Japanese knives with highly polished 8k edges that no tomato skin can stand up to.
Now move the blade – with a little pressure – in regular movements up and down along the sharpening stone. Always maintain the angle between the blade and stone. You will notice a burr become visible after five or so movements. Mentally divide the blade into three sections if the knife has a large blade. Always start with the tip and work back towards the bolster.
2. Although I’ve been sharpening knives for a while, I never could get a knife sharp using the freehand method, I’ve had to rely on various jigs to set & maintain a constant angle to the bevel. To begin with, the Lanksy knife sharpener kit was my main tool, but then I found a South African jig made by Warthog Knife Sharpeners. I still have their first model, which, if memory serves me, came out in the late 1990’s. This has since been upgraded & is supplied with a diamond stone, which is worthless unless it’s going to be used for ceramic knives. However-the Warthog & the Warthog Multi-Blade’s modus operandi has the knife moving ABOVE the stone, unlike the Lanksy / Edge Pro / Edge Pro Chinese copies & variants. ( No oil / water dripping off the stone from above the knife). Also, the Warthogs use any bench-size whetstone available to its owner, a very big plus if you want to use your grand-dad’s old Arkansas stone.No tie in having to buy the manufacturer’s specialised stones which work only with one type of sharpening jig.
